If you’re looking for a quick, flavour-packed dish that feels effortlessly impressive, these Crispy Air Fryer Chickpeas with Za’atar & Minty Yoghurt are the answer. Golden, crunchy chickpeas paired with cool minty yoghurt and warm Middle Eastern spices make this an easy recipe that works beautifully as a snack, starter, or light meal.

Easy Air Fryer Chickpeas with Za’atar & Minty Yoghurt

These crispy air fryer chickpeas are about to become your new favourite thing to make on a weeknight. Seasoned generously with za’atar (one of my favourite Middle Eastern spice blend), they come out of the air fryer golden, crunchy, and utterly addictive in under 15 minutes.

Spoon them over minty yoghurt, drizzle over extra-virgin olive oil and a little honey, scatter some extra za’atar, and serve alongside warm pitta bread or flatbread. It’s a dish that looks and tastes far more impressive than the effort involved.

The inspiration came from The Rocket Store restaurant in Bocastle Harbour. A little Cornish gem that I can recommend enough. The food is wonderful.

Whether you’re after a quick healthy snack, a relaxed starter, or something to add to a mezze spread, this recipe delivers every time. It’s naturally vegetarian, easily made vegan, and (perhaps most importantly), the kind of thing people ask you for the recipe for.

What Is Za’atar?

Za’atar is a fragrant Middle Eastern spice blend traditionally made from dried herbs such as thyme, oregano, or marjoram, mixed with sumac, toasted sesame seeds, and salt. While recipes vary slightly by region and family tradition, the result is always deeply savoury, aromatic, and wonderfully versatile.

Widely used across Lebanese, Palestinian, Israeli, and Syrian cuisines, za’atar is often sprinkled over flatbreads, stirred into olive oil, or used to season roasted vegetables, meats, and legumes. Its earthy, tangy, slightly nutty flavour makes it especially delicious with chickpeas, yoghurt-based dips, and crispy roasted dishes which is exactly why it works so well in this air fryer chickpeas recipe.

In the UK, za’atar is now easy to find in larger supermarkets such as Waitrose, Tesco and Sainsbury’s, as well as Middle Eastern grocers and online spice retailers. If you’ve never cooked with it before, this recipe is a great place to start.

Ingredients

FOR THE AIR-FRYER CHICKPEAS:

  • Canned chickpeas
  • olive oil
  • za’atar
  • garlic powder

FOR THE YOGHURT BASE:

  • thick yoghurt (Skyr or Greek or dairy-free)
  • fresh mint leaves
  • fresh lemon juice
  • lemon zest 
  • salt & pepper

TO SERVE:

  • extra-virgin olive oil
  • za’atar
  • honey
  • pitta bread or flatbread

How to Make Air Fryer Chickpeas with Za’atar (step-by-step)

Step 1 – Dry The Chickpeas

Drain the chickpeas, then spread them on a clean tea towel to remove excess moisture.

Step 2 – Season The Chickpeas

Place the chickpeas in a small mixing bowl and mix with olive oil, za’atar and garlic powder.

Step 3 – Air-Fry The Chickpeas

Arrange the chickpeas in a single layer and place in the air-fryer.

Shaking the chickpeas halfway, bake for 12 to 15 mins at 200°C / 400°F until golden and crispy.

Step 4 – Make The Minty Yoghurt

In the meantime, mix together yoghurt, mint, garlic, lemon juice, lemon zest. Season to taste with salt and pepper.

Step 5 – Assemble and Serve

Spread the minty yoghurt on a serving dish. Scatter the air fried chickpeas on top. Drizzle with olive oil, za’atar and honey.

Serve straight away with pitta bread or flatbread.

Tips for the Crispiest Air Fryer Chickpeas Every Time

  • Dry thoroughly: this is the single most important step. If you are planning ahead, you can also drain the chickpeas the day before and place in a container overnight in the fridge as this will dry them out.
  • Single layer in the basket: overlapping chickpeas will prevent them from becoming crispy
  • Cool slightly before serving: they firm up as they rest
  • Air-fryer model matters: each one run slightly differently; start checking at 12 minutes

Serving Suggestions

  • As a starter or mezze plate: alongside hummus, whipped ricotta, muhammara, or cannellini dip
  • As part of a sharing spread: with olives, warm flatbreads, roasted peppers
  • As a salad topping: scatterthe air-fryed chickpeas over a grain or green salad for crunch
  • As a snack: the yoghurt dip makes it feel complete and substantial
  • In a wrap: tuck into a flatbread with the minty yoghurt, cucumber, and tomatoes

Variations & Swaps

Make It Vegan:

Swap the Skyr or Greek yoghurt for a dairy-free alternative and the honey for maple syrup.

Other Spice Blends

Za’atar works so well here, but you can also try smoked paprika and cumin, chilli flakes, harissa, dukkah or even go for an Indian chaat blend

Dried vs Canned Chickpeas

For convenience (and consistent results), I prefer to use canned chickpeas. However, you can also use dried chickpeas but you will need to soak and cook them first.

Make Ahead & Storage

These air-fryer chickpeas are best eaten shortly after they are made so they keep their crunch. You can potentially re-crisp them the next day in an air-fryer for 2 to 3 minutes.

The yoghurt will make the chickpeas lose their crispiness, so best not to store them together.

Are Za’atar Chickpeas Healthy?

Za’atar chickpeas are a nutritious, high-protein snack or topping that delivers plenty of flavour without relying on heavy ingredients. Chickpeas are naturally rich in plant-based protein, dietary fibre, and complex carbohydrates, making them satisfying and helpful for maintaining steady energy levels. They’re also packed with important nutrients such as iron, folate, and magnesium.

Combined with extra virgin olive oil (a source of heart-healthy unsaturated fats) the result is a snack that feels indulgent while still being nutrient-dense.

If you’re serving your crispy chickpeas with yoghurt, you’ll also benefit from extra protein and calcium.   • 1 Tbsp olive oil
  • 2 tsp za'atar
  • 1/2 tsp garlic powder

  • 250 ml thick yoghurt (Skyr or Greek or dairy-free)

  • 2 Tbsp extra-virgin olive oil
  • 1 tsp za'atar
  • drizzle honey

  • Drain the chickpeas, then spread them on a clean tea towel to remove excess moisture.
