200grolled oats
100grolled oats
2tspground cinnamon
2tspground ginger
1/4tspground cloves
100ghazelnuts
1tspvanilla extract
4Tbspmaple syrup
Zest of 2 oranges
75mlmelted coconut oil
2handful sunflower seeds
½tspsalt
75gdried cranberries
75gdried cherries
90gcocoa nibs
Instructions
Preheat the oven at 180ºC/Fan 160ºC/ 350ºF/gas 4.
Grind 100g of rolled oats to flour.
In a large mixing bowl, mix together oat flour, remaining rolled oats, cinnamon, ginger, cloves, hazelnuts, vanilla extract, maple syrup, orange zests, melted coconut oil, sunflower seeds and salt.
Tip the granola onto a large baking tray lined with a baking sheet. Spread evenly.
Bake for 15 mins. Mix & spread the granola a little bit more. Bake for another 10 depending on how crunchy you want it (the longer in the oven, the crunchier). Mix and spread again. Switch off the oven and leave granola to "dry" inside for 2 hours or so.
When done, mix cranberries, cherries and cocoa nibs in granola. Store in an airtight container.
