This homemade festive granola packs all the Christmas flavours in one bowl: orange, cranberries, cinnamon, ginger, hazelnut and cocoa nibs!

It’s the perfect breakfast to count down the holiday season or wake up to on Christmas morning. Presented in cute little jars, this festive granola also doubles up as a scrumptious edible gift to give to friends and family.

Cocoa nibs bring a delicate chocolatey flavour. If you prefer something bolder, simply replace them with some small chunks of dark chocolate.

This recipe makes one large jar and will keep in an airtight container for up to one month.

Slightly sour and sweet, organic cranberries make a tasty alternative to raisins. Add them to salads, yoghurt or trail mix. For this festive granola recipe, I have paired them with dried cherries, orange zest and cocoa nibs. So good!

Organic sunflower seeds are packed with nutritional goodness, and are rich in protein, fibre and various other nutrients. Delicious raw or toasted, they add a bit of crunch and plenty of goodness to this granola.

I always keep a jar of sunflower seeds in my cupboard, as I like using them as toppings for salads, soups.

Ingredients
 
 

  • 200 g rolled oats
  • 100 g rolled oats
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 100 g hazelnuts
  • 1 tsp vanilla extract
  • 4 Tbsp maple syrup
  • Zest of 2 oranges
  • 75 ml melted coconut oil
  • 2 handful sunflower seeds
  • ½ tsp salt
  • 75 g dried cranberries
  • 75 g dried cherries
  • 90 g cocoa nibs
(Switch on to prevent your screen from going dark)

Instructions
 

  • Preheat the oven at 180ºC/Fan 160ºC/ 350ºF/gas 4.
  • Grind 100g of rolled oats to flour.
  • In a large mixing bowl, mix together oat flour, remaining rolled oats, cinnamon, ginger, cloves, hazelnuts, vanilla extract, maple syrup, orange zests, melted coconut oil, sunflower seeds and salt.
  • Tip the granola onto a large baking tray lined with a baking sheet. Spread evenly.
  • Bake for 15 mins. Mix & spread the granola a little bit more. Bake for another 10 depending on how crunchy you want it (the longer in the oven, the crunchier). Mix and spread again. Switch off the oven and leave granola to “dry” inside for 2 hours or so.
  • When done, mix cranberries, cherries and cocoa nibs in granola. Store in an airtight container.
