Ingredients
 
 

  • 300 g leeks - white part only
  • 2 organic eggs
  • 1 Tbsp sweet white miso
  • 90 g soft goat cheese
  • 60 g shallots
  • 2 garlic cloves
  • 1 Tbsp butter
  • 1 Tbsp olive oil

MISO DRESSING:

  • 1 Tbsp sweet white miso
  • 1 Tbsp freshly grated ginger
  • 1 Tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp sesame oil
  • 1 tsp tamari sauce
  • salt & pepper

Instructions
 

  • Heat some olive oil in a large frying pan. Add the finely sliced shallots and crushed garlic. Fry gently until soft.
  • Add the very finely chopped leeks and butter.
  • Stirring often, cook under medium heat for around 20 mins until leeks are very soft and "melted".
  • In the meantime, pre-heat the oven to 200°C/180°C fan/360°F/Gas 6.
  • Separate the egg yolks from the whites.
  • Remove the leeks from heat. Mix in the goat cheese, 1 Tbsp sweet miso and beaten yolks.
  • Beat the egg whites until stiff, then carefully fold them into the leek mixture. Season to taste.
  • Butter 6 dariole moulds. Divide the leek mixture evenly between them.
  • Cook for 15 mins until risen and golden.
  • In the meantime make the miso dressing by mixing together 1 Tbsp sweet miso, grated ginger, rice vinegar, honey, sesame oil and soy sauce.
  • When ready serve the soufflés with miso dressing on the side.
