A perfect appetizer, these Leek Soufflés With Miso Dressing are very straightforward and really delicious. Once cooked they hold their shape well and won’t collapse within minutes.
The filling is made from leeks and creamy goat cheese.
The miso dressing is perfect with them. I also like to add some grated carrots on the side.
Leek Soufflés With Miso Dressing [vegetarian]
A perfect appetizer, these Leek Soufflés With Miso Dressing are very straightforward and really delicious.
Equipment
food processor or whisk
6 diarole moulds [size: (6.5cm Dia. x 6cm H / (2½" x 2¼") / 150ml]

Ingredients
- 300 g leeks – white part only
- 2 organic eggs
- 1 Tbsp sweet white miso
- 90 g soft goat cheese
- 60 g shallots
- 2 garlic cloves
- 1 Tbsp butter
- 1 Tbsp olive oil
MISO DRESSING:
- 1 Tbsp sweet white miso
- 1 Tbsp freshly grated ginger
- 1 Tbsp rice vinegar
- 1 tsp honey
- 1 tsp sesame oil
- 1 tsp tamari sauce
- salt & pepper
Instructions
- Heat some olive oil in a large frying pan. Add the finely sliced shallots and crushed garlic. Fry gently until soft.
- Add the very finely chopped leeks and butter.
- Stirring often, cook under medium heat for around 20 mins until leeks are very soft and “melted”.
- In the meantime, pre-heat the oven to 200°C/180°C fan/360°F/Gas 6.
- Separate the egg yolks from the whites.
- Remove the leeks from heat. Mix in the goat cheese, 1 Tbsp sweet miso and beaten yolks.
- Beat the egg whites until stiff, then carefully fold them into the leek mixture. Season to taste.
- Butter 6 dariole moulds. Divide the leek mixture evenly between them.
- Cook for 15 mins until risen and golden.
- In the meantime make the miso dressing by mixing together 1 Tbsp sweet miso, grated ginger, rice vinegar, honey, sesame oil and soy sauce.
- When ready serve the soufflés with miso dressing on the side.
