2large ripe mangoes
juice of 1/2 lemon
Instructions
Place mango flesh in a blender with the lemon juice. Whizz until smooth.

Line a solid dehydrator tray with parchment paper (I use the drip try from my BioChef Arizona Sol Food Dehydrator). Depending on your tray, lining with parchment paper is not essential but it will help cut the fruit leather into strips.
Spread the mango puree evenly on the tray.
Place in the dehydrator at 60°C / 140°F for 6 to 8 hours. Check every hour or so until the mango puree feels dry to the finger and looks like leather. When done you can simply peel it off and cut it into strips to roll-up.
