Making this mango fruit leather at home is easy and requires only two ingredients: mango and lemon juice. I add a little bit of lemon juice to prevent oxidation. There is no added sugar necessary as the fruits are sweet enough.
Once dry, you can simply cut the fruit leather into strips to make fruit roll-ups, a perfect tasty treat for kids’ lunchboxes, post-workout fuel or a healthy snack when you are out and about. My kids have always loved fruit roll-ups and I found making my own fruit leather much cheaper than buying it from shops. Also, shop-bought fruit roll-ups generally contain more wrappers than products so making them at home ends up wasting less packaging.
For this recipe, I have used my BioChef Arizona Sol Food Dehydrator which is my secret weapon to make healthy snacks and treats. It takes between 6-8 hours to dry the fruit puree and I would advise that, after 6 hours, you check progress every hour or so. The duration will depend on the performance of your dehydrator.
The massive advantage of the BioChef Arizona Sol Food Dehydrator is that it has a horizontal airflow which ensures even heat distribution so that each tray (front and back) is dried equally. Mango Fruit Leather (In A Food Dehydrator)

Ingredients
- 2 large ripe mangoes
- juice of 1/2 lemon
Instructions
- Place mango flesh in a blender with the lemon juice. Whizz until smooth.2 large ripe mangoes, juice of 1/2 lemon
- Line a solid dehydrator tray with parchment paper (I use the drip try from my BioChef Arizona Sol Food Dehydrator). Depending on your tray, lining with parchment paper is not essential but it will help cut the fruit leather into strips.
- Spread the mango puree evenly on the tray.
- Place in the dehydrator at 60°C / 140°F for 6 to 8 hours. Check every hour or so until the mango puree feels dry to the finger and looks like leather. When done you can simply peel it off and cut it into strips to roll-up.
