Rosemary Chili Nuts

Sweet, salty and spicy these rosemary chili nuts are utterly addictive. I added some juicy flame raisins for the perfect combination of flavours. Fresh rosemary gives them a wonderful aroma.

Ingredients
 
 

  • 250 g mixed nuts (I used cashews, almonds and pecans)
  • 75 g pumpkin seeds
  • 2 Tbsp olive oil
  • 1 Tbsp light brown sugar
  • 1 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 2 Tbsp freshly chopped rosemary
  • 2 handfuls of flame raisins
  • chilli flakes

Instructions
 

  • Preheat oven to 180C/fan 160C/gas 4.
  • Place nuts in a large bowl.
  • In a separate bowl, mix together oil, sugar, cumin, salt and rosemary. Toss nuts into the oil mixture until well coated all over.
  • Spread the nuts on a baking tray and cook for 12-15mins in the oven until roasted.
  • When done, leave to cool down. Mix in flame raisins and chili flakes to taste. Add more salt if necessary.
