Sweet, salty and spicy these rosemary chili nuts are utterly addictive. I added some juicy flame raisins for the perfect combination of flavours. Fresh rosemary gives them a wonderful aroma.
These roasted nuts are perfect for parties, Christmas, New Year or even as a simple on-the-go snack. You can even bake a batch or two to give as gifts during the holiday season.
You can use any combination of nuts for this recipe, but my personal favourite is almonds, cashews and pecans in equal amount. I also add some pumpkin seeds for additional crunch which you can substitute with sunflower seeds.
The chili flakes are added last so you can make these rosemary chili nuts as spicy as you like.
This recipe is extremely easy to make. There are only 5 minutes of prep and 12-15 minutes of cooking time. This nut combo can be made ahead and kept in an airtight container for a few weeks.

Rosemary Chili Nuts

Ingredients
- 250 g mixed nuts (I used cashews, almonds and pecans)
- 75 g pumpkin seeds
- 2 Tbsp olive oil
- 1 Tbsp light brown sugar
- 1 1/2 tsp ground cumin
- 1/2 tsp salt
- 2 Tbsp freshly chopped rosemary
- 2 handfuls of flame raisins
- chilli flakes
Instructions
- Preheat oven to 180C/fan 160C/gas 4.
- Place nuts in a large bowl.
- In a separate bowl, mix together oil, sugar, cumin, salt and rosemary. Toss nuts into the oil mixture until well coated all over.
- Spread the nuts on a baking tray and cook for 12-15mins in the oven until roasted.
- When done, leave to cool down. Mix in flame raisins and chili flakes to taste. Add more salt if necessary.
