Sausage and Potato Casserole [vegan] [gluten free]
This Sausage and Potato Casserole is packed with the smoky flavours of LikeMeat’s “Like Smoked Sausage”. This is a hearty dish that vegetarians, vegans and meat-eaters can enjoy together.

Ingredients
750gbaby potatoes
olive oil
1onion
2garlic cloves
1red pepper
2tspdried thyme
2x180g packs of Like Meat "Like Smoked Sausage" [2 x 6.3 oz]
2handfuls baby spinach leaves
lemon juice to taste
salt & pepper
small bunch of parsley
Instructions
Cut the baby potatoes in halves. Cut the sausages into slices.
Heat some water in a large pan. When the water is boiling, transfer the potatoes to the pan and cook for around 10-12mins until cooked. Drain well when done.
Heat some olive oil in a large frying pan. Fry the boiled potatoes until golden all over. You might have to do this by batches. When the potatoes are done, transfer them to a plate.
Heat some more olive oil in the frying pan. Add finely chopped onion, crushed garlic cloves, sliced red pepper and thyme. Cook for 3 mins or so until the onion is soft. Add the sliced sausages and cook together for 6-8 mins.
Add the fried potatoes back into the pan, followed by the spinach. Stir all together and cook until the spinach is wilted and the potatoes have warmed up. Season to taste with lemon juice, salt & pepper. Serve straight away with some freshly chopped parsley on top.
