The potatoes are first boiled in water, then pan-fried. The sausages are cooked with onion, garlic, red pepper, spinach and thyme. This recipe comes together easily in around 45mins and is seasoned with fresh lemon juice and parsley.
A real crowd-pleaser, this Sausage and Potato Casserole can be served as dinner or lunch. The leftovers will also reheat brilliantly.
You can swap the spinach for kale if you like, making sure you remove the hard stalks first.
I have used LikeMeat’s “Like Smoked Sausages” to give this dish a delicious meaty twist. They not only have a delicate smoky flavour similar to some bratwursts, but also have a nice firm bite
They cook brilliantly in around 6 minutes either in a pan or under the grill. They can be eaten on their own with a side of salad or coleslaw, in a bun “hot dog style” or with sauerkraut.

Sausage and Potato Casserole [vegan] [gluten free]

Ingredients
- 750 g baby potatoes
- olive oil
- 1 onion
- 2 garlic cloves
- 1 red pepper
- 2 tsp dried thyme
- 2 x180g packs of Like Meat “Like Smoked Sausage” [2 x 6.3 oz]
- 2 handfuls baby spinach leaves
- lemon juice to taste
- salt & pepper
- small bunch of parsley
Instructions
- Cut the baby potatoes in halves. Cut the sausages into slices.
- Heat some water in a large pan. When the water is boiling, transfer the potatoes to the pan and cook for around 10-12mins until cooked. Drain well when done.
- Heat some olive oil in a large frying pan. Fry the boiled potatoes until golden all over. You might have to do this by batches. When the potatoes are done, transfer them to a plate.
- Heat some more olive oil in the frying pan. Add finely chopped onion, crushed garlic cloves, sliced red pepper and thyme. Cook for 3 mins or so until the onion is soft. Add the sliced sausages and cook together for 6-8 mins.
- Add the fried potatoes back into the pan, followed by the spinach. Stir all together and cook until the spinach is wilted and the potatoes have warmed up. Season to taste with lemon juice, salt & pepper. Serve straight away with some freshly chopped parsley on top.

Where can we buy Like Meat products in the UK?

Hi Rena, Like Meat products are not available in the UK at the moment (you can swap the sausages in this recipes for another brand and add a touch of smoked paprika or liquid smoke to make up for the smokey taste). I am not sure when Like Meat will be available again in this country. The company says that it is working on it. I hope this helps. Annabelle
