Ingredients
1small red onion
2garlic clovescrushed
olive oil
1large red pepper
1tspdried thyme
1tspsmoked paprika
800gcan chopped tomatoes
3-4tspsugar
2Tbspdark soy sauce
1Tbspcider vinegar
800gcan of beansbutter beans or cannellini beans
salt
TO SERVE:
slicesof your favourite bread
fresh parsley leaves
optional gratedvegan cheese
Instructions
Heat some oil in a large saucepan. Add finely chopped onion, crushed garlic, and sliced red pepper. Fry gently for a couple of minutes. Add thyme, smoked paprika and chopped tomatoes. Season with sugar, soy sauce, and cider vinegar.

Simmer for 10mins until the pepper is cooked and the sauce has thickened. Add drained beans and cook for a few more minutes until they have warmed through. Season with salt if needed.

Toast the bread slices. Place them on individual plates and top with a generous ladle of baked beans and some fresh parsley. You can even add some grated cheese if you like.
