Ingredients
 
 

  • 1 small red onion
  • 2 garlic cloves crushed
  • olive oil
  • 1 large red pepper
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 800 g can chopped tomatoes
  • 3-4 tsp sugar
  • 2 Tbsp dark soy sauce
  • 1 Tbsp cider vinegar
  • 800 g can of beans butter beans or cannellini beans
  • salt

TO SERVE:

  • slices of your favourite bread
  • fresh parsley leaves
  • optional grated vegan cheese

Instructions
 

  • Heat some oil in a large saucepan. Add finely chopped onion, crushed garlic, and sliced red pepper. Fry gently for a couple of minutes. Add thyme, smoked paprika and chopped tomatoes. Season with sugar, soy sauce, and cider vinegar.

  • Simmer for 10mins until the pepper is cooked and the sauce has thickened. Add drained beans and cook for a few more minutes until they have warmed through. Season with salt if needed.

  • Toast the bread slices. Place them on individual plates and top with a generous ladle of baked beans and some fresh parsley. You can even add some grated cheese if you like.
