Smoky Beans on Toast – A Tasty Twist on a Classic

These smoky beans on toast are the ultimate comfort food: quick, easy, and packed with flavour. Served on a thick slice of sourdough, they make a hearty and satisfying meal that’s perfect any time of the day.

Not only is this dish delicious, but it’s also nutritious. High in plant-based protein and low in fat, these beans are a great way to enjoy a wholesome meal without spending hours in the kitchen. Ready in under 30 minutes, it’s ideal for busy days when you want something filling but fuss-free.

The beans are simmered with red pepper in a rich tomato sauce, infused with the smoky warmth of paprika and thyme. A dash of soy sauce, cider vinegar, and a touch of sugar help to balance the flavours, creating a deep, savoury taste that’s both comforting and moreish.

Ingredients
 
 

  • 1 small red onion
  • 2 garlic cloves crushed
  • olive oil
  • 1 large red pepper
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 800 g can chopped tomatoes
  • 3-4 tsp sugar
  • 2 Tbsp dark soy sauce
  • 1 Tbsp cider vinegar
  • 800 g can of beans butter beans or cannellini beans
  • salt

TO SERVE:

  • slices of your favourite bread
  • fresh parsley leaves
  • optional grated vegan cheese
(Switch on to prevent your screen from going dark)

Instructions
 

  • Heat some oil in a large saucepan. Add finely chopped onion, crushed garlic, and sliced red pepper. Fry gently for a couple of minutes. Add thyme, smoked paprika and chopped tomatoes. Season with sugar, soy sauce, and cider vinegar.
    1 small red onion, 2 garlic cloves, olive oil, 1 large red pepper, 1 tsp dried thyme, 1 tsp smoked paprika, 800 g can chopped tomatoes, 3-4 tsp sugar, 2 Tbsp dark soy sauce, 1 Tbsp cider vinegar
  • Simmer for 10mins until the pepper is cooked and the sauce has thickened. Add drained beans and cook for a few more minutes until they have warmed through. Season with salt if needed.

  • Toast the bread slices. Place them on individual plates and top with a generous ladle of baked beans and some fresh parsley. You can even add some grated cheese if you like.
