Ingredients
- 1 small red onion
- 2 garlic cloves crushed
- olive oil
- 1 large red pepper
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 800 g can chopped tomatoes
- 3-4 tsp sugar
- 2 Tbsp dark soy sauce
- 1 Tbsp cider vinegar
- 800 g can of beans butter beans or cannellini beans
- salt
TO SERVE:
- slices of your favourite bread
- fresh parsley leaves
- optional grated vegan cheese
Instructions
- Heat some oil in a large saucepan. Add finely chopped onion, crushed garlic, and sliced red pepper. Fry gently for a couple of minutes. Add thyme, smoked paprika and chopped tomatoes. - Simmer for 10mins until the pepper is cooked and the sauce has thickened. Add drained beans and cook for a few more minutes until they have warmed through. Season with salt if needed.800 g can of beans, salt
