Ingredients
  

  • 2 medium ripe avocado
  • 2 Tbsp fresh coriander leaves - finely chopped
  • 1 Tbsp fresh parsley leaves - finely chopped
  • 1/2 Tbsp fresh mint leaves - finely chopped
  • 1 garlic clove - crushed
  • 1/4 tsp ground cumin
  • juice of 1 to 2 lemons
  • 1 roasted pepper - from a jar finely chopped
  • sprinkle sunflower seeds
  • salt & pepper

Instructions
 

  • Make the avocados with a fork.
  • Add the crushed garlic, ground cumin, chopped herbs, lemon juice and roasted pepper.
  • Mixed together. Season to taste.
  • Spread on your favourite bread or bagel, sprinkled with some sunflower seeds.
