Ingredients
- 2 medium ripe avocado
- 2 Tbsp fresh coriander leaves – finely chopped
- 1 Tbsp fresh parsley leaves – finely chopped
- 1/2 Tbsp fresh mint leaves – finely chopped
- 1 garlic clove – crushed
- 1/4 tsp ground cumin
- juice of 1 to 2 lemons
- 1 roasted pepper – from a jar finely chopped
- sprinkle sunflower seeds
- salt & pepper
Instructions
- Make the avocados with a fork.
- Add the crushed garlic, ground cumin, chopped herbs, lemon juice and roasted pepper.
- Mixed together. Season to taste.
- Spread on your favourite bread or bagel, sprinkled with some sunflower seeds.
