Heat some olive oil in a large frying pan. Add finely chopped shallots and fry gently for a couple of minutes.
Add finely sliced mushrooms, crushed garlic and dried thyme. Cooked under medium heat covered for 5 mins. Then cook uncovered for around 8-10 minutes until mushrooms are cooked.
Add 2 Tbsp of dairy-free cream and freshly chopped parsley leaves. Mix well. Season to taste with lemon juice, salt and pepper.
Place mushroom mixture on bread slice. Add a sprinkle of parsley leaves. Eat straight away.
