This recipe uses my simple vegan cashew cream but you can substitute it with another dairy-free cream if you wish.
Whether for breakfast, brunch, lunch or dinner, this recipe is truly versatile and takes only 20 minutes to make.
Which mushrooms are best for this recipe
When it comes to making delicious mushrooms on toast, the type of mushroom you choose can make all the difference. While some prefer the earthy flavor of portobello mushrooms, others may opt for the delicate taste of shiitake or oyster mushrooms.
Some popular options include button mushrooms, shiitake mushrooms, portobello mushrooms, and oyster mushrooms. Each type of mushroom has its own unique flavour and texture, making it a versatile ingredient for this simple yet delicious meal.
For this recipe, like with my mushroom salad, any type of mushroom will do. Here I have chosen chestnut but chanterelles would do nicely for a special occasion. A mix of wild mushrooms is also delicious.
How to make these mushrooms on toast
The finely sliced mushrooms are sauteed first with shallots, crushed garlic and dried thyme. Once the mushrooms are cooked, simply add 2 tablespoons of my simple vegan cashew cream to the mixture. As mentioned above, you can substitute it with another dairy-free cream if you wish.
Then simply add some freshly chopped parsley leaves and season to taste with lemon juice, salt and pepper.
Serve on slices of your favourite bread and enjoy!
What is the best type of bread?
My preference is a thick wholemeal or sourdough bread but this recipe also works on a lighter, crusty French bread or gluten-free option.

Ingredients
- 3 Tbsp olive oil
- 2 shallots [50g / 1.75oz]
- 350 g mushrooms
- 2 garlic cloves
- 1 tsp dried thyme
- 2 Tbsp of cashew cream
- 2-3 Tbsp freshly chopped parsley leaves
- lemon juice to taste
- salt & pepper
- 2 slices of your favourite bread
Instructions
- Heat some olive oil in a large frying pan. Add finely chopped shallots and fry gently for a couple of minutes.
- Add finely sliced mushrooms, crushed garlic and dried thyme. Cooked under medium heat covered for 5 mins. Then cook uncovered for around 8-10 minutes until mushrooms are cooked.
- Add 2 Tbsp of dairy-free cream and freshly chopped parsley leaves. Mix well. Season to taste with lemon juice, salt and pepper.
- Place mushroom mixture on bread slice. Add a sprinkle of parsley leaves. Eat straight away.
