Already a big fan of Nordic Noir, I am quickly becoming obsessed with Scandinavian vegetarian cuisine. From the Stockholm kitchen of Green Kitchen Stories, I now invite you into the Copenhagen home of the very talented Sarah Britton, author of the genius blog My New Roots.

Naturally Nourished is her second cookbook and features 100 new recipes “for inspired weeknight cooking”. Sarah decided to write this book in response to letters from her readers who wanted more healthy recipes that could fit all budgets.

Naturally Nourished is organised in 5 main chapters, each one following the seasons in some way or another:

  • Satisfying Soups: nutritious meals throughout the year from Spring Minestrone to Summer Chill-Out Cucumber & Avocado Soup, to Autumn Cashew Corn Chowder and wintry Clever Parsnip Oven Soup.
  • Sumptuous Salads: lunch or light dinner options, such as vegan Grilled Caesar Salad, Coconut-Quinoa Coleslaw, Rainbow Hummus Bowl or Ginger-Pickled Carrot Lentil Salad.
  • Nourishing Mains: wholesome meal ideas including Fantastic Falafel Waffles, Smoked Lentil Tacos with Pico de Gallo, Vibrant Pink Pesto Pasta, Butter Bean Ginger Stew or even a scrumptious Sweet Potato, Cauliflower and Coconut Casserole
  • Simple Sides and Small Plates: healthy sides such as Marinated Roasted Red Peppers with Chickpeas, Baked Feta with Olives, Peppers and Tomatoes or Roasted Brussels Sprouts with Maple Walnuts.
  • Snacks: nourishing sweet and savoury favourites including Sweet Potato Date Muffins, Brilliant Banana Almond Soft-Serve, Soured Cream & Onion Chickpea Crisps or Roasted Sesame Avocado Cream.

There is no need to be an experienced cook to enjoy Sarah’s healthy recipes. She is all about simple cooking, demonstrating easy cooking techniques and making them accessible to everyone. While she loves cooking, she also enjoys life outside her kitchen so she has devised Naturally Nourished to be time-saving. Most recipes include a rollover option so you can re-purpose leftovers into another meal, saving time and money!

There is even a handy chart showing how Sarah builds her recipes, so you can come up with your own creations using ingredients available in your fridge and cupboard. Each recipe is marked with icons to help you identify dishes suitable for vegan, raw, gluten-free and /or grain-free diets.

Bright and colourful photography illustrates each wholesome nutrient-rich dish. All ingredients are easy to source and used over and over again throughout the book.

Naturally Nourished is a cookbook of delicious staple vegetarian recipes to make over and over again throughout the seasons. It is ideal for vegetarians and flexitarians looking for wholesome and nutritious plant-based meal ideas. There are many vegan recipes while other recipes can easily be adapted.

The rollover options are perfect to make the best of food and “cook smart, not hard”. Never boring, there is plenty of diversity as Sarah takes her inspiration from different world cuisines and even creates her own spin on classics, such as her rice-less Surprising Sunflower Seed Risotto.
