Ole & Steen Unveils New Summer Open‑Rye Sandwich Menu with Danish Flair
The Danes, it must be said, have a particular skill for baking: simple, beautiful, and rooted in centuries of tradition. If you are a fan of Danish pastries or rye bread, you’ll know what I mean. But no need to travel to Copenhagen to get a taste of it, just step into any Ole & Steen bakery in London.
The story of Ole & Steen began in Denmark in the 1990s, when bakers Ole Kristoffersen and Steen Skallebaek joined forces to create a single bakery, originally called Lagkagehuset or “layer cake house”.
Proud of its commitment to artisanal and handcrafted baking, Ole & Steen has since become a beloved staple in Denmark and beyond. To this day, all products are made fresh every single day by hand.

With bakeries across Copenhagen, London and New York, Ole & Steen has made its reputation on its true Scandinavian feel and authentic, high-quality, delicious baked goods – from its famous Cinnamon Socials (a delicious braided sweet soft dough pastry, topped with icing and filled with vanilla custard and cinnamon paste – that is also available as a plant-based option) to authentic Danish Breads. Open Rye Summer Menu
In celebration of Midsummer, the mystical Scandinavian festival marking the summer solstice, Ole & Steen is introducing a new range of open rye sandwiches that are fresh, vibrant and utterly delicious.
The new open rye summer menu has been crafted in collaboration with Trine Hahnemann, one of Denmark’s most celebrated chefs and food writers, who has just launched her new book called Eat Copenhagen.
Available from Tuesday 17th June, this seasonal range takes inspiration from the traditional Danish smørrebrød, the open-faced sandwich known for its creative visual appeal and mix of texture, colour and flavour. Trust me, these aren’t your average lunchtime bites.

Served on top of Ole & Steen’s signature carrot rye bread, the new open rye sandwich range includes:
- Smoked salmon, herb and lemon cream cheese, fennel, fresh dill and micro herbs.
- Roast beef, horseradish mayonnaise, spinach, pickled red onions, cucumber and micro herbs
- Green pea, herb and chicken salad, fresh asparagus and micro herbs.
- Avocado and peas, jammy egg, mixed seeds and pea shoots.
