I have created the following Beetroot Hummus Sandwich for Hovis as a quick lunch option to have with their Wholemeal bread. Make the hummus ahead, stick it in the fridge and enjoy during the week!
This beetroot hummus is super delicious with plant-based proteins, fibre, fats and fresh vegetables. All this in only 10 minutes of prep. For a tasty twist, I added walnuts and mint to the hummus. Forget store-bought sandwiches, just take this one to work and enjoy!
I not only love bread but it is also a staple part of my flexitarian diet. I enjoy a lot of plant-based foods such as seasonal vegetables, fruits, beans, pulses, nuts, seeds and whole grains. They taste deliciously fresh, and also help with a balanced diet.
I tend to prefer wholemeal bread because it’s naturally rich in whole grains, is low in fat and tastes fantastic. It also is high in fibre and a source of vitamin B1. The extra soft crust of Hovis Wholemeal Bread is a real winner with my kids.
The Hovis range has plenty to choose from in addition to plain wholemeal such as Lower Carb Wholemeal, Farmhouse Wholemeal, Granary and Seeds Sensations Wholemeal (another family favourite).

Beetroot Hummus Sandwich [vegan]

Ingredients
- 400 g can chickpeas
- 250 g cooked beetroot
- 4 Tbsp lemon juice
- 2 garlic cloves
- 1 Tbsp tahini
- 1 tsp ground cumin
- 1 tsp ground coriander
- 3/4 tsp salt
- 30 g walnuts
- 10 mint leaves
SANDWICH FILLING (for 1 sandwich)
- 2 slices of Hovis Wholemeal bread
- ¼ carrot
- ½ avocado
- 2 slices of red pepper
- small handful of watercress
- small handful of micro-green sprouts
Instructions
- Put all the ingredients of the beetroot hummus in a food processor and blend until smooth.
- Spread hummus on 1 slice of Hovis Wholemeal bread. Add finely cut carrot (you can use a julienne cutter if easier), followed by sliced avocado, red pepper, watercress and micro-green sprouts. Top with another slice of bread. Enjoy!
