Vegetarian Recipes You’ll Love Post Christmas

So Christmas is well and truly over and done with for another year, we hope you all had a merry time feasting on your delicious homemade menus. But what will you do with the leftovers? Because let’s face it, you probably bought way too much again!

Here are a few clever vegetarian recipes that you can try post-Christmas that will use up those leftovers and see that nothing goes to waste.

Vegetable Cake

You can get fruit cake so why not create a vegetable cake? And you may be pleasantly surprised to find vegetable cake is sweet and moist, while bursting with flavour.

You can incorporate carrots, parsnips, squash, swede or a mixture of them all with ginger, mixed spices and raisins to create a flavourful dessert the whole family will love. Decorate with icing or buttercream for an added sweat layer to this colourful creation.

Souffle

Cheese Soufflé

Did you serve a cheeseboard as a savoury snack or desserts at Christmas? If so, why not continue to indulge yourself and use the leftover cheese in a delicious soufflé? These are light, fluffy and will taste delicious. Plus they are easier to make than you may think.

You’ll really impress your visitors this January if you place one of these in front of them.

Stilton Fondue

Another great idea to use up all of that cheese is to invite friends over for a fondue party. A few dips in the cheese will instantly have you feeling like you are transported back to the 70s, without the terrible hair and shoulder pads though, we hope!

This is such an easy dish to make and allows your guests to get stuck in with it. Add a little leftover cider to your mix for a boozy element. And serve with a variety of breads and carrot and celery sticks for dipping.

Cabbage and Potato Hash

Corned beef hash is a popular meal made of leftovers for meat eaters, but don’t let the fact you don’t eat meat leave you out of trying this delicious dish. You could make a cabbage and potato hash instead!

Mix in some apple and walnuts or serve with egg for a scrumptiously crisp and filling breakfast that will set you up for the day ahead of January sale shopping and visiting family.

Christmas Pudding Crumble

Do you have loads of Christmas pudding left over each year? Well, if you get a bit sick of it after a while why not transform it into a brand new dish for you and your guests to enjoy such as a pudding crumble?

Combine the leftover pudding with cooking apples, pears, cranberry sauce, festive spices and other baking ingredients to create a golden spiced masterpiece that you can serve well into the New Year.
