The 16th – 22nd May marks National Vegetarian Week so whether you’re looking for an alternative to your regular meat-based dishes or some inspiration for new veggie fare, here are 5 fantastic recipes from the Stove Site that you can cook outdoors in your Fornetto Oven:
CATALAN VEGETABLE SALAD
Enjoy a taste of Spain with this simple yet flavoursome dish.
You will need:
· 2 aubergines
· 2 yellow peppers, halved
· 4 red peppers, halved
· 2 large onions, peeled and halved
· 2 tsp salt
· Freshly ground black pepper
· 2 tbsp fresh lemon juice
· 3 cloves garlic, minced
· 7 tbsp extra virgin olive oil
· 3 tbsp chopped curly parsley (optional)
Recipe:
1. Heat your oven to 250˚C/500˚F
2. Prick aubergines with a fork, rub with olive oil and place on a baking tray
3. Place peppers and onions on a separate baking tray, cut side down
4. Roast for 10 minutes, turn, then roast for a further 10 minutes until tender
5. Remove from oven, cover with foil and allow to cool
6. Chop half of peppers and onions into chunks and set aside
7. Finely chop remaining peppers and onions and return to baking tray
8. Add the flesh of the aubergines, plus the olive oil, salt, pepper, garlic and lemon juice and mix thoroughly.
9. Return to oven for 15 minutes
10. Stir in the pepper and onion chunks, garnish with parsley and serve.
LITTLE FOCACCIA BREADS
These Focaccia breads make a great side for vegetarian dishes or if you vary the following toppings, a perfect snack for big and little appetites:
You will need:
· 500g Bread Flour
· 350ml Water
· 4 tbsp Olive oil
· 2 tsp Salt
· 3 tsp Active yeast
· Pinch sugar
· Cherry tomatoes, mozzarella, rosemary, olives, mushrooms or any other topping you’d like!
Recipe:
1. Preheat your oven to 200˚C/400˚F.
2. In a mixing bowl, combine yeast, water, sugar and oil. Mix thoroughly and set aside.
3. In a separate bowl, combine bread flour and salt.
4. Make a well in the centre of the flour and add liquids gradually until they combine to form a dough.
5. Tip dough onto floured surface and knead until smooth.
6. Grease the inside of a bowl with olive oil, add dough, cover with cling film and set aside to prove for around 1.5 hours or until it has doubled in size.
7. Tip dough onto a floured surface and knead until smooth.
8. Cut dough into 6 or 8 pieces, roll each into a ball and flatten with the heel of your palm.
9. Add toppings of your choice, then sprinkle with salt and olive oil.
10. Place focaccia onto baking tray and into your oven warmer drawer. Allow to rise by half.
11. Move to oven and bake for around 20 minutes until crisp and golden.
SPICY RICE
Give your rice a taste of the Middle East with this easy, spicy dish.
You will need:
· 750g Long grain rice plus water as specified by your chosen brand
· 2 tbsp Garlic powder
· 2 tbsp Onion powder
· 1 tbsp Ground coriander
· 1 tbsp Ground turmeric
· 1 tbsp Ground cumin
· 20 Cherry tomatoes
· 1 finely chopped red chilli (optional)
· 1 tsp Salt
· 4 tbsp Olive oil
Recipe:
1. Preheat oven to 175˚C/350˚F
2. Add rice, spices, water, salt and oil to an ovenproof dish.
3. Cover and cook in oven for 50 mins.
4. Remove, add tomatoes and return to oven for a further 15 mins.
5. Remove, fluff with fork and serve.
WOOD FIRED PIZZA DOUGH
Pizza is a crowd pleaser at any time of year and it’s beautiful with almost any variety of veg, cheese and herbs on top.
You will need:
· 500g Bread flour
· 250ml water
· 2 tsp Active dry yeast
· 1 tsp Sugar
· 1 tbsp Olive oil
· Pinch of salt
· Your choice of toppings
Recipe
1. Preheat oven to 200˚C/400˚F
2. Combine yeast, sugar and 2 tbsp water and set aside in a warm place for around 15 mins.
3. Tip flour and salt into a large bowl.
4. Add remaining water to yeast mixture, stir and gradually add to flour until a workable dough is formed.
5. Turn onto floured surface and knead until pliable and smooth.
6. Grease bowl with olive oil, add dough, cover with cling film and allow to rest for 1-2 hours until its doubled in size.
7. Turn out dough and knead again on a floured surface.
8. Cut into 4 pieces, roll or press out until flat.
9. Dress with your choice of toppings.
10. Place on pizza stone and cook until the crust turns light golden brown.
Tip: Add uncooked polenta or semolina to your pizza stone to prevent the dough from sticking and add your choice of wood chips to the smoker for a rich, authentic taste of Italia!
APPLE AND SPICE PUFF PASTRY TART
No meal is complete without a delicious pudding and your outdoor oven is so versatile it can be used to make this delicious apple tart.
You will need:
· 1, 8oz sheet Puff pastry
· 4 large apples, peeled, cored and chopped into chunks
· 60g Sugar
· 1 lemon, juiced
· 2 tbsp Plain flour
· 2 tsp Ground cinnamon
· 100g Flaked almonds
· 100g Walnuts, roughly chopped
· 175g Oats
· 85g Dark brown sugar
· 120g Butter
· Pinch salt
· Vanilla ice-cream and caramel sauce to serve (Optional)
Recipe:
1. Preheat oven to 170˚C/350˚F
2. Place apples in large mixing bowl along with 1 tsp cinnamon, lemon juice, granulated sugar and flour. Stir and set aside.
3. In a separate bowl, combine oats, brown sugar, remaining cinnamon and butter and rub with fingers until it starts to resemble crumble mixture. Add nuts.
4. Lightly grease Fornetto stone or baking tray.
5. Line with puff pastry sheet.
6. Top with apples, taking care to leave 1 inch around the edge, then fold pastry in and onto apples to create a sealed border.
7. Brush with beaten egg before spreading crumble mixture over the top.
8. Bake in oven for around 45 mins until golden brown and cooked throughout.
9. Serve with ice-cream and caramel sauce.
