Craving a nutritious, flavourful meal but short on time? This speedy broccoli pasta with miso butter is your new go-to dinner.

Ready in just 15 minutes, this fusion dish combines broccoli florets with pasta all tossed in rich and savoury miso butter. Perfect for flexitarians, vegetarians and easily customisable for vegans, this recipe is sure to become a family favourite.

Miso Butter

Miso butter is the real star of this recipe. Definitely a step up from the “pâtes au beurre” (pasta with butter) from my childhood, offering the perfect savoury, salty, and fatty combination. The butter adds richness and creaminess that balances beautifully with the mild sweetness and saltiness of white miso.

Make It Your Own

This broccoli pasta recipe is really versatile. Here are some delicious ways to make it your own:

  • Add Protein: Toss in some grilled tofu, tempeh, chickpeas or white beans.
  • Spice It Up: Add a pinch of crushed red chilli flakes.
  • Nutty Crunch: Sprinkle some toasted nuts or seeds.
  • Herbs: Fresh basil, parsley, or oregano can add a burst of flavour and colour.

I like to cook the broccoli until it’s just fork-tender, so it holds its shape and doesn’t fall apart when the miso butter is mixed in.

This is a great family-friendly recipe, and you can adjust the broccoli’s texture (by cooking it separately) to suit everyone’s tastes: softer for the kids, crunchier for the adults. If you’re cooking for picky eaters, try chopping the broccoli finely so it blends more easily into the pasta.

🌱 MAKE IT VEGAN : to make this broccoli pasta recipe vegan, simply swap the butter and parmesan (try my cashew parmesan) for dairy-free alternatives. Keep in mind that most dairy-free spread do contain salt, so make sure to adjust the miso paste quantity accordingly so that the final dish is not too salty.

How To Make This Broccoli Pasta with Miso Butter

Ingredients

To make this broccoli pasta with miso butter recipe, you will need:

  • pasta
  • broccoli
  • unsalted butter
  • white miso
  • Parmesan-style cheese

Step 1: Cook The Pasta

Cook the pasta in a large pan according to packet instructions.

Step 2: Prep The Broccoli

In the meantime, cut the broccoli florets into small bitesize chunks.

Step 3: Make The Miso Butter

Mix the butter and miso together in a small bowl. Set aside.

Step 4: Cook The Broccoli

When the pasta has around 3 minutes left to cook, add the broccoli florets to the pan and cook until the pasta is cooked and the broccoli is fork tender (don’t overcook the broccoli).

Drain the pasta and the broccoli, reserving some of the cooking liquid.

Step 5: Mix In The Miso Butter

Return the pasta and broccoli to the pan. Gently mix the miso butter in. Add a splash of pasta cooking liquid to loosen things up.

Step 6: Serve The Broccoli Pasta

Serve straight away with Parmesan-style cheese on top.

Leftovers: Storage and Reheating Guide

If you have any leftover, they can be stored in the fridge and reheated later. This will make the broccoli softer.

Storage:

  • Cool the pasta completely before storing.
  • Place in an airtight container in the refrigerator.
  • Consume within 3 days.

Reheating:

Stovetop Method (Recommended)

  • Place the pasta in a pan over medium heat.
  • Add a splash of water.
  • Stir gently until heated through, about 3-5 minutes.

Microwave Method

  • Put a portion in a microwave-safe dish.
  • Add a splash of water and cover.
  • Heat in 30-second intervals, stirring between each, until hot.

  • 450 g broccoli florets
  • 90 g unsalted butter softened (of choice) (see note 1)
  • 3 Tbsp white miso

TO SERVE:

  • Parmesan-style cheese
(Switch on to prevent your screen from going dark)

Instructions
 

  • Cook the pasta in a large pan according to packet instructions.
    360 g pasta
  • In the meantime, cut the broccoli florets into small bitesize chunks.
    450 g broccoli florets
  • Mix the butter and miso together in a small bowl. Set aside.
    90 g unsalted butter softened (of choice), 3 Tbsp white miso
  • When the pasta has around 3 minutes left to cook, add the broccoli florets to the pan and cook until the pasta is cooked and the broccoli is fork tender (don't overcook the broccoli).
