Cooked in a rich and smoky tomato sauce, this one-pot vegetarian sausage casserole is one of our family’s favourite comfort meals.
The sausages are cooked with red pepper, smoked paprika, tomatoes, herbs and cannellini beans. This is a quick and easy recipe that can be ready in 40 mins or so.
Served with mashed potatoes, this vegetarian sausage casserole makes a hearty and filling dinner.
You can easily swap the vegetarian sausages for vegan sausages.

Vegetarian Sausage Casserole

Ingredients
- 8 vegetarian sausages
- olive oil
- 1 red onion
- 1 large red pepper
- 2 garlic cloves crushed
- 1 1/2 tsp smoked paprika
- 2 Tbsp sun-dried tomato paste
- 800 g chopped canned tomatoes
- 800 g canned cannellini beans
- 2 tsp dried thyme
- 2 tsp dried oregano
- 2 tsp sugar optional
TO SERVE:
- small bunch of fresh parsley
- Mashed potatoes
Instructions
- Heat some olive oil in a large casserole. Gently fry the sausages until slightly brown.
- Add finely sliced red onion, sliced red pepper, crushed garlic, smoked paprika and sun-dried tomato paste. Fry all together for another 3 minutes.
- Add chopped tomatoes, drained cannellini beans, thyme and oregano to the casserole.
- Cook for 10 mins covered, then 10 mins uncovered until red pepper is soft.
- Season to taste (if the canned tomatoes are too acidic, you can add some sugar to balance it out).
- Serve with mashed potatoes with chopped parsley on top.
