Ingredients
- 8 vegetarian sausages
- olive oil
- 1 red onion
- 1 large red pepper
- 2 garlic cloves crushed
- 1 1/2 tsp smoked paprika
- 2 Tbsp sun-dried tomato paste
- 800 g chopped canned tomatoes
- 800 g canned cannellini beans
- 2 tsp dried thyme
- 2 tsp dried oregano
- 2 tsp sugar optional
TO SERVE:
- small bunch of fresh parsley
- Mashed potatoes
Instructions
- Heat some olive oil in a large casserole. Gently fry the sausages until slightly brown.olive oil, 8 vegetarian sausages
- Add finely sliced red onion, sliced red pepper, crushed garlic, smoked paprika and sun-dried tomato paste. Fry all together for another 3 minutes.1 red onion, 1 large red pepper, 2 garlic cloves, 1 1/2 tsp smoked paprika, 2 Tbsp sun-dried tomato paste
- Add chopped tomatoes, drained cannellini beans, thyme, and oregano to the casserole.800 g chopped canned tomatoes, 800 g canned cannellini beans, 2 tsp dried thyme, 2 tsp dried oregano
- Cook for 10 mins covered, then 10 mins uncovered until red pepper is soft.
- Season to taste (if the canned tomatoes are too acidic, you can add some sugar to balance it out).2 tsp sugar
- Serve with mashed potatoes with chopped parsley on top.small bunch of fresh parsley, Mashed potatoes
