Hearty Vegetarian Sausage Casserole: A One-Pot Comfort Meal

This one-pot vegetarian sausage casserole is a comforting, flavour-packed dish that’s perfect for a cosy meal. Cooked in a rich and smoky tomato sauce, it’s one of our family’s favourite dinners, especially on chilly evenings. The deep flavours of smoked paprika, tomatoes, and herbs pair beautifully with the hearty texture of cannellini beans and red peppers. Every bite is warming, satisfying, and packed with plant-based goodness.

The sausages are gently simmered in the sauce, soaking up all the delicious flavours, making this dish both simple and incredibly tasty. Ready in about 40 minutes, it’s a quick and easy option for busy weeknights. Serve it with creamy mashed potatoes for the ultimate comfort meal, or pair it with crusty bread to soak up every last bit of the smoky tomato sauce. Ingredients
 
 

  • 8 vegetarian sausages
  • olive oil
  • 1 red onion
  • 1 large red pepper
  • 2 garlic cloves crushed
  • 1 1/2 tsp smoked paprika
  • 2 Tbsp sun-dried tomato paste
  • 800 g chopped canned tomatoes
  • 800 g canned cannellini beans
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 2 tsp sugar optional

TO SERVE:

  • small bunch of fresh parsley
  • Mashed potatoes
(Switch on to prevent your screen from going dark)

Instructions
 

  • Heat some olive oil in a large casserole. Gently fry the sausages until slightly brown.

  • Add finely sliced red onion, sliced red pepper, crushed garlic, smoked paprika and sun-dried tomato paste. Fry all together for another 3 minutes.

  • Add chopped tomatoes, drained cannellini beans, thyme, and oregano to the casserole.
    800 g chopped canned tomatoes , 800 g canned cannellini beans, 2 tsp dried thyme, 2 tsp dried oregano
  • Cook for 10 mins covered, then 10 mins uncovered until red pepper is soft.
  • Season to taste (if the canned tomatoes are too acidic, you can add some sugar to balance it out).
    2 tsp sugar
  • Serve with mashed potatoes with chopped parsley on top.
