Avocado toast with zaatar recipe. This is my kind of to-go lunch when I have no time for lunch. It works great for breakfast or brunch too.
Zaatar is a flavoursome spice blend from the Middle East that you can find in supermarkets and speciality stores. It not only pairs brilliantly with avocado but also with eggs or yoghurt.

Avocado Toast With Zaatar [vegan]
Avocado toast with zaatar recipe. A to-go lunch when I have no time for lunch.

Ingredients
- 1 avocado
- 1 slice of bread
- 2 sprigs coriander + extra for serving
- 2 mint leaves
- 2 tsp zaatar
- 1/2 lemon juice + zest
- 1 tsp olive oil
- pinch of Hymalian salt
Instructions
- Put the avocado flesh in a bowl. Mash with the zaatar, chopped mint, chopped coriander and lemon juice.
- Spread on your favourite piece of bread topped with olive oil, some additional chopped coriander, lemon zest and a pinch of Hymalian salt.
