Topped with flaked almonds and pumpkin seeds for added crunch, this vegan and gluten-free dish is perfect for a light yet fulfilling meal.
Spiralising courgettes is a simple way to create light, nutritious vegetable noodles, often used as a low-carb alternative to pasta. You can use a spiraliser or julienne peeler to cut courgettes into thin, noodle-like strands. They can be eaten raw in salads or lightly cooked in stir-fries and pasta dishes. Courgette noodles, also called “zoodles,” are a great way to add more vegetables to your diet while keeping meals fresh and flavourful.

Ingredients
- 1 courgette
- 1 avocado
- 1 garlic clove
- juice of 1 1/2 lime
- 1 Tbsp finely cut basil leaves
- 1 Tbsp finely cut mint leaves
- finely cut chilli to taste
- flaked almonds to sprinkle
- pumpkin seeds to sprinkle
- salt & pepper
- drizzle of agave syrup or honey – optional
Instructions
- Cut the courgette using a spiraliser or julienne peeler. Place on a plate.1 courgette
- Place the avocado flesh in a separate bowl. Mash to a paste with a fork. Add the crushed garlic and lime juice.1 avocado, juice of 1 1/2 lime, 1 garlic clove
- Toss the avocado mixture with the courgette and chopped herbs. Add chilli. Season to taste.1 Tbsp finely cut basil leaves, 1 Tbsp finely cut mint leaves, finely cut chilli to taste, salt & pepper
- Serve with almond flakes and pumpkin seeds sprinkled on top (I also like to add a tiny drizzle of agave syrup or honey).flaked almonds to sprinkle, pumpkin seeds to sprinkle, drizzle of agave syrup or honey – optional
