- shallots
- vegetable oil
- 1 medium ciabatta
- 1 handful of rocket or watercress
For the Salsa Verde
- fresh basil
- fresh parsley
- fresh mint leaves
- capers
- garlic
- Dijon mustard
- olive oil
- lemon juice
- salt and pepper
Step-by-step Instructions
Step 1: Fry the Mushrooms

Heat 2 Tbsp vegetable oil in a small saucepan. Fry the shallots over medium-high heat until soft, about 5 minutes.
Add the mushrooms and cook until golden, about 10 minutes. Season to taste with salt and pepper.
Step 2: Make the Salsa Verde

Chop the basil, parsley, mint, and capers finely. Mix in a bowl with the grated garlic, mustard, olive oil, and lemon juice. Season to taste with salt and pepper.
