Delicious Apple Cinnamon Granola – A Wholesome Vegan Treat

Our apple tree has treated us to another glut of apples this autumn. I love making apple butter. The kids love apple chips as a snack so much, I thought it would be fun to make some breakfast granola with them.

This apple & cinnamon granola is such a delight to make as the sweet aroma of cinnamon makes the whole house smell delicious.

This recipe is super easy, just allow plenty of time as you have to make the apple chips first and then the granola.

Ingredients

  • 1 portion of apple chips (see link in intro) – make them plain without cinnamon
  • 200 g rolled oats
  • 100 g rolled oats
  • 2 tsp cinnamon
  • 75 ml melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 4 Tbsp maple syrup
  • 2 handfuls of raisins
  • 2 handful sunflower seeds
(Switch on to prevent your screen from going dark)

Instructions

  • First make the apple chips omitting the cinnamon. (see recipe link in the intro)
1 portion of apple chips (see link in intro) – make them plain without cinnamon
  • Increase the oven temperature to 160ºC/325ºF/gas 3.
  • Put 100g of rolled oats in a blender and grind them to flour.
    100 g rolled oats
  • Mix together rolled oats, rolled oats flour, coconut oil, vanilla, cinnamon, salt and maple syrup.
200 g rolled oats , 2 tsp cinnamon, 75 ml melted coconut oil, 1 tsp vanilla extract, 1/4 tsp salt, 4 Tbsp maple syrup
  • Tip the granola onto a large baking tray lined with a baking sheet. Spread a little as you would do with the top of a crumble. You do not want it too thin.
  • Bake for 20 mins. Mix & spread the granola a little bit more. Bake for another 10 mins. Mix and spread again. Switch off the oven and leave granola to "dry" inside for 2 hours or so.
  • Cut apple chips into chunks. Mix them with the raisins, sunflower seeds and the granola. Store in an airtight container.
2 handfuls of raisins, 2 handful sunflower seeds
