There is something so comforting about starting a festive morning with a stack of warm, fluffy pancakes, and these Christmas Pancakes are just the thing to bring a little extra cheer to your breakfast holiday table. Soft and fluffy, they are topped with homemade cranberry sauce, oranges, and walnuts.

Festive & Fluffy Christmas Pancakes

These vegan gingerbread Christmas pancakes are topped with homemade cranberry sauce, oranges, and walnuts. Soft and fluffy, they are also the perfect excuse to use any leftover cranberry sauce you might have after the festive season.

Homemade cranberry sauce (like my Cranberry & Orange Sauce), perhaps leftover from a holiday meal, makes the perfect topping and adds a tangy-sweet flavor and vibrant ruby-red color. I also like to add orange pieces and walnuts.

Making these Christmas pancakes is incredibly simple. Start by making the cranberry sauce then whisk together flour, spices, baking powder, and raisins with dairy-free milk, oil, and vanilla.

The addition of gingerbread spices (cinnamon, ginger, nutmeg, and allspice) transforms this straightforward batter into a fragrant holiday masterpiece. With minimal prep time these Christmas pancakes are as easy to make as they are delicious.

Heat a large frying pan under medium to high heat. Grease the pan generously with butter.

Add 2 tablespoons of batter to make the first pancake. Cook under medium heat until bubbles form on the top of the pancake. It should take between 1 and 2 minutes.
