These vegan gingerbread Christmas pancakes are topped with homemade cranberry sauce, oranges, and walnuts. Soft and fluffy, they are also the perfect excuse to use any leftover cranberry sauce you might have after the festive season.
Homemade cranberry sauce (like my Cranberry & Orange Sauce), perhaps leftover from a holiday meal, makes the perfect topping and adds a tangy-sweet flavor and vibrant ruby-red color. I also like to add orange pieces and walnuts.
Making these Christmas pancakes is incredibly simple. Start by making the cranberry sauce then whisk together flour, spices, baking powder, and raisins with dairy-free milk, oil, and vanilla.
The addition of gingerbread spices (cinnamon, ginger, nutmeg, and allspice) transforms this straightforward batter into a fragrant holiday masterpiece. With minimal prep time these Christmas pancakes are as easy to make as they are delicious.

How to make these Christmas pancakes
Ingredients
To make this Christmas pancakes, you will need:
- plain flour
- baking powder
- ground sweet cinnamon
- ground ginger
- ground nutmeg
- ground allspice
- salt
- raisins
- dark brown sugar
- milk of choice
- vegetable oil
- vanilla extract
- Dairy free butter (to cook the pancakes)
FOR THE CRANBERRY SAUCE: (YOU CAN ALSO USE STOREBOUGHT)
- fresh cranberries
- orange juice
- light brown sugar
- water
- Zest of 1/2 orange
- cinnamon
TO SERVE
- walnuts
- orange
Step 1: Make the cranberry sauce
Place the cranberries, orange juice, light brown sugar, water, orange zest, and cinnamon in a saucepan. Stirring often, heat over medium to high heat and simmer until the cranberries are tender but still holding their shape, about 8 to 10 minutes. Remove from heat and set aside.
Step 2: Make the pancake batter
In a large bowl, mix together the flour, baking powder, cinnamon, ginger, nutmeg, allspice, salt, raisins, and dark brown sugar.
In a separate bowl, mix together the milk, vegetable oil, and vanilla.
Mix the wet and dry ingredients together, until well combined.
Step 3: Cook the pancakes
Heat a large frying pan under medium to high heat. Grease the pan generously with butter.
Add 2 tablespoons of batter to make the first pancake. Cook under medium heat until bubbles form on the top of the pancake. It should take between 1 and 2 minutes. Flip the pancake to the other side and cook for another minute or so until done. Repeat with the rest of the batter. Depending on the size of your frying pan you can cook 2 to 4 pancakes at once.
Step 4: Serve
Serve the pancakes hot, topped with cranberry sauce, orange pieces, and walnuts.

- 125 ml orange juice
- 90 g light brown sugar
- 60 ml water
- Zest of 1/2 orange
- 1 tsp ground sweet cinnamon

- 1 orange peeled and cut into small pieces
