shaved Brussels sprouts salad

This easy and delicious shaved Brussels sprouts salad is the perfect winter salad that you can serve as a side dish or light lunch.

Fresh and crispy, it is tossed in a zingy lemon dressing and brings together thinly sliced Brussels sprouts, apple, dry cranberries, walnuts, parsley, and feta cheese.

If you prefer a vegan alternative, you can easily skip the cheese or swap it for a plant-based alternative.

The Brussels sprouts are left raw, so you will need to cut them in very thin slices. This can be done with a sharp knife, but in the interest of ease and time, I prefer to use a mandoline slicer like this one.

The lemon dressing is adapted from the zingy citrus dressing recipe on page 308 of my cookbook “Less Meat, More Plants“

This shaved Brussels sprouts salad will make a fantastic addition to your festive menu and a nice alternative to coleslaw.
