A vegetarian curry is probably the ultimate one-pot comfort food. Conveniently, it can be made to suit favourite world cuisines such as Indian or Thai. Whether is a family dinner or a casual meal entertaining friends, the recipes below are bound to hit the spot every time. Many are also one-pot recipes that will save on the washing-up. They will make brilliant leftovers the next day, as the spice flavours will have had a chance to develop even more.
With National Curry Week in full swing, I rounded up some of my favourite vegetarian curry and vegan curry recipes. They are so delicious and hearty that you are unlikely to miss the meat! Many of these dishes are cooked in creamy coconut milk and make the best of seasonal vegetables that add a vibrant burst of colours.
Chickpeas and pulses are popular ingredients for vegetarian curries as they boost their nutritional content with added plant-based proteins.
If you have the time I recommend that you make your own flatbreads to serve with any of the dishes below. So easy and rewarding.
