This delicious combination of crispy smashed potatoes, hearty lentils, fresh herbs, and creamy yoghurt makes the perfect balance of textures and flavours.

Crispy Smashed Potatoes with Herby Lentils

This delicious combination of crispy smashed potatoes, hearty lentils, fresh herbs, and creamy yoghurt makes the perfect balance of textures and flavours.

This recipe is perfect for a light lunch or as a side dish. I use my recipe for air fryer smashed potatoes as a base, but you can also use oven-roasted potatoes or any other root vegetables like butternut, carrot, celeriac, Jerusalem artichoke etc . . .

Crispy Smashed Potatoes with Herby Lentils

How to make these crispy smashed potatoes with herby lentils

Ingredients needed:

FOR THE POTATOES:

  • small potatoes: baby or new potatoes
  • vegetable oil
  • salt 
  • garlic powder

FOR THE LENTIL SALAD:

  • Puy lentils: you can also use speckled lentils or lentilles vertes
  • extra-virgin olive oil 
  • fresh mint
  • fresh parsley
  • fresh dill
  • red onion
  • fresh lemon juice
  • garlic cloves
  • cumin seeds
  • Salt & pepper

TO SERVE:

  • yoghurt of choice
  • extra dill fonds

Step 1: Cook the potatoes

Cook the potatoes as per my recipe for “air fryer smashed potatoes“. The recipe also includes explanations on how to cook the potatoes in an oven, in case you do not have an air fryer.

Step 2: Cook the lentils

Heat a small saucepan of water. When boiling, salt the water, and add the lentils. Cook the lentils according to packet instructions for around 12 minutes until tender (they should still hold their shape).

Drain the lentils. Transfer them to a salad bowl and toss in 4 tablespoons of olive oil. Leave to cool on the side.

Step 3: Toast the cumin seeds

Heat a small saucepan over medium-high heat and dry toast the cumin seeds until fragrant. Set aside.

Step 4: Chop the herbs and red onion

Chop the herbs and red onion. Toss the herbs, lemon juice, garlic, cumin seeds, and red onion with the lentils. Season to taste with salt and pepper.

Step 5: Plate and serve

Scatter the lentil salad on a serving platter. Top with crispy smashed potatoes, yoghurt, and dill.

Ingredients
 
 

FOR THE POTATOES:

  • 1 kg air fryer smashed potato (recipe includes method to make them without an air fryer)

FOR THE LENTIL SALAD:

  • 1/2 tsp salt
  • 200 g Puy lentils
  • 4 to 6 Tbsp extra-virgin olive oil to taste
  • 15 g freshly chopped mint
  • 15 g freshly chopped parsley
  • 15 g freshly chopped dill
  • 1 small red onion
  • 3 to 4 Tbsp fresh lemon juice to taste
  • 2 garlic cloves grated
  • 1 Tbsp cumin seeds
  • Salt & pepper

TO SERVE:

  • yoghurt of choice
  • extra dill fonds

Instructions
 

  • Cook the potatoes as per my recipe for "air fryer smashed potatoes" (follow the link in the ingredient list. The recipe also includes explanations on how to cook the potatoes in an oven, in case you do not have an air fryer).
    1 kg air fryer smashed potato
  • Meanwhile, cook the lentils. Heat a small saucepan of water. When boiling, add 1/2 teaspoon of salt followed by the lentil lentils and cook according to packet instructions for around 12mins until tender (they should still hold their shape).
    200 g Puy lentils, 1/2 tsp salt
  • Drain the lentils. Transfer to a salad bowl and toss in 4 tablespoons of olive oil. Leave to cool on the side.
    4 to 6 Tbsp extra-virgin olive oil
  • Heat a small saucepan over medium-high heat and dry toast the cumin seeds until fragrant.
    1 Tbsp cumin seeds
  • Chop the herbs and red onion.
    15 g freshly chopped mint, 15 g freshly chopped parsley, 15 g freshly chopped dill, 1 small red onion
  • Toss the herbs, lemon juice, garlic, cumin seeds, and red onion with the lentils. Season to taste with salt and pepper.
    3 to 4 Tbsp fresh lemon juice, 2 garlic cloves, Salt & pepper
  • Scatter the lentil salad on a serving platter. Top with crispy smashed potatoes, yoghurt, and dill.
