Vegan Plum Frangipane Tart – A Classic French Dessert Made Dairy-Free
There is something truly irresistible about the combination of juicy, sweet plums and rich, nutty frangipane. This classic almond filling, pairs beautifully with the natural tartness of plums, creating a dessert that’s both comforting and elegant. Perfect for using seasonal plums, this tart is a must-try for anyone that enjoys fruity desserts.
As the frangipane bakes, it turns beautifully golden and slightly crisp on the outside while remaining soft and moist inside, soaking up the juices from the fruit for a burst of flavour in every bite.
Make sure the plums are ripe as it will enhance the flavour of this tart. You can replace the puff pastry with a shortcrust pastry if you like.
For this vegan version I am using:
- Chia eggs: instead of eggs
- Dairy-free butter: instead of conventional butter
- Just Roll Puff Pastry: which happens to be vegan
What is frangipane?
Traditionally found in French baking, frangipane is a rich, almond-flavoured filling made from ground almonds, butter, sugar, and eggs. It pairs beautifully with fruits like plums, apricots, pears, and cherries and is commonly used to make:
- Bakewell Tart: A British pastry with a shortcrust base, a layer of jam, and frangipane, topped with flaked almonds.
- Galette des Rois: A French “King’s Cake” traditionally eaten for Epiphany, where frangipane is enclosed in puff pastry.
- Tarte Bourdaloue: A French pear and almond tart, which is one of my favourite desserts.

Plum Frangipane Tart

Ingredients
- 600 g ripe plums
- 1 Just Roll Vegan Puff Pastry
- 150 g ground almonds
- 150 g golden caster sugar
- 100 g dairy-free butter
- 1 chia egg – 1 Tbsp ground chia seeds + 3 Tbsp of water
- 1 Tbsp plain flour
- 1 tsp vanilla extract
Instructions
- Make the chia egg by mixing 1 Tbsp of ground chia seeds with 3 Tbsp of water. Mix well. Set aside.1 chia egg – 1 Tbsp ground chia seeds + 3 Tbsp of water
- Preheat the oven to 200°C/400°F/Gas 6.
- Remove stones from plums and cut them into quarters.600 g ripe plums
- Roll out puff pastry to fit a tart tin. Approximatively 26 cm (12.2 inches) diameter.1 Just Roll Vegan Puff Pastry
- Make the filling by mixing together ground almonds, sugar, butter, chia egg, vanilla extract and flour. Blend until the filling is spreadable.150 g ground almonds, 150 g golden caster sugar, 100 g dairy-free butter, 1 Tbsp plain flour, 1 tsp vanilla extract
- Spread filling evenly on top of the pastry.
- Arrange quartered plums evenly on top of filling.
- Cook for around 30 mins until golden.
- Cool completely before serving.
