The combination of flavours of this matcha & coconut overnight porridge with fresh figs is just so delicious and refreshing.

Fresh figs are one of my favourite things at this time of the year and they work really well with the matcha, coconut and vanilla.

This is a feel-good breakfast that will keep you fuelled for hours.

Ingredients
 
 

  • 150 g porridge – rolled oats
  • 500 ml oat milk [US 2 cups]
  • 2 tsp matcha powder
  • 1 tsp vanilla extract
  • 2 Tbsp shredded coconut
  • sweetener of your choice – maple syrup, agave syrup etc …

TOPPINGS:

  • 2 figs
  • coconut shavings
  • pumpkin seeds or any favourites
  • chia seeds – optional
(Switch on to prevent your screen from going dark)

Instructions
 

  • Pour the milk, oats, matcha, vanilla and shredded coconut hemp in a container or jar. Close the lid and shake well. Cover and leave in the fridge overnight.
  • When ready to use, sweeten to taste and share evenly between two bowls.
  • Top with sliced figs and the toppings of your choice.
