This Roasted Swede, Kale and Black Eyed Peas with Smoked Paprika recipe is perfect for anyone who gets a weekly vegetable box.

Swede is often seen as a boring veg and most often you find it in soups. Growing up I remember my granddad frying some swede slices served with a persillade on top. A simple yet tasty dish my mum still makes to this day. It can be served on its own or as a side dish.

I gave it a twist here adding kale, black eyed peas  and some flavoursome smoked paprika.

This recipe makes a quick, easy and cheap dinner which is perfect for Winter vegetable boxes.
