Swede is often seen as a boring veg and most often you find it in soups. Growing up I remember my granddad frying some swede slices served with a persillade on top. A simple yet tasty dish my mum still makes to this day. It can be served on its own or as a side dish.
I gave it a twist here adding kale, black-eyed peas and some flavoursome smoked paprika.
This recipe makes a quick, easy and cheap dinner which is perfect for winter vegetable boxes.

Roasted Swede, Kale and Black Eyed Peas with Smoked Paprika [vegan] [gluten free]

Ingredients
- 400 g swede
- 400 g can black eyed peas
- 1 large handful kale – shredded – hard stalk removed
- 1 medium red onion
- 2 garlic cloves – crushed
- 1 lemon juice + extra for serving
- 1 tsp smoked paprika + extra for serving
- 2 handfuls chopped parsley leaves
- olive oil
- salt & pepper
Instructions
- Cut the red onion into thin wedges. Peel the swede and cut in long sticks shape (similar to medium thin French fries).
- Heat some olive oil in a large frying pan. Add the onion wedges, crushed garlic and smoked paprika. Fry for 2 minutes.
- Add the swede sticks. Mix well until they are coated with oil all over.
- Cover and cook under medium heat for around 15 mins until just soft. Make sure you stir the vegetables from time to time so they do not burn.
- Once the swede is ready, add kale. Fry for 3 mins.
- Drain the black eye peas and rinse well.
- Add the black eyed peas to the vegetables. Cook for another 2 mins until warm.
- Season to taste with lemon, salt & pepper.
- Sprinkle parsley on top.
- Serve straight away with additional lemon juice and smoked paprika on top if desired.
