This roasted swede, kale and black eyed peas with smoked paprika recipe is perfect for anyone who gets a weekly vegetable box.

Swede is often seen as a boring veg and most often you find it in soups. Growing up I remember my granddad frying some swede slices served with a persillade on top. A simple yet tasty dish my mum still makes to this day. It can be served on its own or as a side dish.

I gave it a twist here adding kale, black-eyed peas and some flavoursome smoked paprika.

This recipe makes a quick, easy and cheap dinner which is perfect for winter vegetable boxes.

Ingredients
 
 

  • 400 g swede
  • 400 g can black eyed peas
  • 1 large handful kale – shredded – hard stalk removed
  • 1 medium red onion
  • 2 garlic cloves – crushed
  • 1 lemon juice + extra for serving
  • 1 tsp smoked paprika + extra for serving
  • 2 handfuls chopped parsley leaves
  • olive oil
  • salt & pepper
(Switch on to prevent your screen from going dark)

Instructions
 

  • Cut the red onion into thin wedges. Peel the swede and cut in long sticks shape (similar to medium thin French fries).
  • Heat some olive oil in a large frying pan. Add the onion wedges, crushed garlic and smoked paprika. Fry for 2 minutes.
  • Add the swede sticks. Mix well until they are coated with oil all over.
  • Cover and cook under medium heat for around 15 mins until just soft. Make sure you stir the vegetables from time to time so they do not burn.
  • Once the swede is ready, add kale. Fry for 3 mins.
  • Drain the black eye peas and rinse well.
  • Add the black eyed peas to the vegetables. Cook for another 2 mins until warm.
  • Season to taste with lemon, salt & pepper.
  • Sprinkle parsley on top.
  • Serve straight away with additional lemon juice and smoked paprika on top if desired.
