These refreshing watermelon lollies are the perfect summer treat: light, naturally sweet, and completely vegan. With just a few simple ingredients, they make a healthier alternative to store-bought ice lollies, and they are low in sugar too. Vegan Watermelon Lollies – A Refreshing Low-Sugar Summer Treat

Beat the heat with these refreshing watermelon lollies. Light, naturally sweet, and the perfect low-sugar treat for summer, they are incredibly easy to make. Requiring just a few simple ingredients, they make a healthier alternative to traditional ice lollies. With fresh watermelon as the star ingredient, these lollies make an ideal treat for hot summer days. If you like simple cooking, check out my full range of five-ingredient recipes.

This recipe yields 8 lollies, each 90ml (3 fl oz). Whether you’re looking for a quick snack to cool off, a fun treat for the kids, or a guilt-free indulgence on a sunny afternoon, these watermelon lollies are sure to hit the spot.

Not only are they incredibly tasty, but they also come together in no time. Simply blend the watermelon and freeze the mixture in your lolly moulds. You can also get creative with the recipe by adding a splash of lime juice or mint for a zesty twist.

Ingredients
 
 

  • 500 g watermelon flesh
  • juice of 2 lemons
  • 1 Tbsp maple syrup to taste
(Switch on to prevent your screen from going dark)

Instructions
 

  • Remove the seeds from the watermelon flesh.
    500 g watermelon flesh
  • Place in a blender with lemon juice. Whizz to liquid.
    juice of 2 lemons
  • Sweeten to taste with maple syrup.
    1 Tbsp maple syrup to taste
  • Pour the mixture evenly in lolly moulds. Place in the freezer for 30-45mins, so the mixture has time to harden and can hold a lolly stick upright.
  • Place a lolly stick in each mould. Freeze for another 6-8 hrs until solid.
