Vegan Waffles with Grilled Nectarines

These scrumptious vegan waffles are topped with grilled nectarines, granola and maple cashew cream.

Topped with grilled nectarines, granola, and a silky maple cashew cream, these vegan waffles are absolutely scrumptious. You can enjoy them at breakfast or for dessert.

How to make the cashew cream

First, you will need to prepare the cashew cream. Soaking cashews can be time-consuming so to speed things up I use boiling water instead of cold water. Twenty minutes later the cashews are ready and all you have to do is to whizz them in a blender with some dairy-free milk, maple syrup, lemon juice, and salt until you have a smooth and silky cream.

How to make these vegan waffles

These vegan waffles are made without eggs and are a simple mixture of flour, baking powder, and a touch of sugar. The wet ingredients (dairy-free milk, vegetable oil, apple cider vinegar and vanilla extract) are whisked in until you have a smooth batter without lumps. If the batter gets too lumpy, simply transfer it to the blender and blend it for 30 seconds or so until it is completely smooth.

When the batter is ready, you can start making the waffles. Make sure your waffle iron is well greased and spread some batter to cover 3/4 of the waffle plate. Close and cook for 3 to 5 minutes until crisp and golden. Conveniently, my waffle maker beeps to let me know the waffles are ready!

In the meantime, you can start grilling the nectarines. I use a cast iron griddle pan but you can also put them under the grill or on the barbecue.

To serve, top each waffle with a nectarine half, some cashew cream, a sprinkle of your favourite granola, and a few sprigs of mint. Enjoy!

  • 3 mixing bowls
  • 1 Blender
  • 1 waffle iron
  • 1 griddle pan

Ingredients
 
 

FOR THE CASHEW CREAM

  • 140 g unsalted cashews
  • 125 ml dairy-free milk
  • 3 tbsp maple syrup
  • 1 tbsp lemon juice
  • ¼ teaspoon salt

FOR THE WAFFLES

  • 250 g plain flour
  • 1 tbsp sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 400 ml dairy-free milk
  • 60 ml neutral-tasting vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

TOPPINGS

  • 3 nectarines
  • vegetable oil
  • granola
  • mint leaves

Instructions
 

  • Place cashews in a bowl. Cover with boiling water. Set aside to soak for 20 minutes.
  • Drain the cashews. Place in the bowl of a blender with 125ml [US 1/2 cup] dairy-free milk, maple syrup, lemon juice, and salt. Whizz until smooth. Set aside.
  • To make the waffles, stir together the flour, sugar, baking powder, and salt in a large mixing bowl.
  • In a separate bowl, mix together the dairy-free milk, oil, cider vinegar, and vanilla extract.
  • Whisk the wet ingredients into the dry ingredients until you have a smooth batter without lumps.
  • Pre-heat a greased waffe iron.
  • Spread some of the waffle batter so that to cover 3/4 of the waffle plate. Close and cook for 3 to 5 minutes until crisp and golden. Conveniently, my waffle maker beeps to let me know the waffles are ready!
  • When done transfer the waffle to a rack and keep warm while you are making the rest of the waffles.
  • In the meantime, heat a greased griddle pan on high heat. Cut the nectarines in half and remove the stones. Grill the nectarines face down until softened, and set aside.
  • Serve each waffle topped with a nectarine half, some cashew cream, a sprinkle of your favourite granola, and a few sprigs of mint.

Bursting with flavours this Garlic & Tomato Pasta makes a delicious and easy summer dish that is perfect for this hot weather. You can serve it slightly warm or at room temperature. It is also scrumptious the next day as a cold leftover.

This is an old family recipe that back home we call Pâtes à l’ail. Growing up, my Sicilian great-aunt (yes I am a 1/4 Italian in case you did not know 😉) would make it for us in the summer when tomatoes are at their best. 

Like any recipe that has been passed down through generations, creating a written version of it, involved quite a few phone calls between my mum and one of our cousins. Everyone in the family makes this Garlic & Tomato Pasta from memory, adding their own twist and using approximate quantities of ingredients. My version is even more different as I have added cannellini beans for protein.
