Top 10 Meat Free Recipes To Try This February

10 Meat Free Recipes To Try This February

Are you looking for seasonal meat-free recipe inspiration on what to eat this February? With the cold weather and nights drawing in early,  it is the perfect time for some comfort food and hearty meat-free meals. While our vegetable garden is looking a bit sad, we are lucky to get some seasonal produce from our local CSA.

This month, do look out for Brussels sprout, cauliflower, celeriac, chicory, kale, leek, parsnip, potato, purple sprouting broccoli, rhubarb, swede alongside banana, blood orange, kiwi, lemon, orange, passion fruit, pomegranate, pineapple, Sevilla orange to brighten up your plates.

Here are my top 10 meat-free recipes to try this February:

Roasted Cauliflower with Chermoula [vegan] [gluten free]

Roasted Cauliflower with Chermoula [vegan] [gluten-free]

This Roasted Cauliflower with Chermoula recipe makes a quick and easy dinner option in our house.

Chunky and hearty cauliflower has a satisfying and filling texture which is ideal for meat-free dishes. Here I have added chickpeas to give this recipe a plant based protein boost.

Carrot & Cashew Soup [vegan] by The Flexitarian

Carrot & Cashew Soup [vegan]

This vegan Carrot & Cashew Soup is a warming blend of carrot, apple, curry, cashews and ginger. Smooth and velvety, it is delicious with some crusty bread.

Jerusalem Artichoke, Leek & Mushroom Pie [vegetarian] by The Flexitarian

Jerusalem Artichoke, Leek & Mushroom Pie [vegetarian]

Deliciously creamy, this vegetarian Jerusalem Artichoke, Leek & Mushroom Pie makes the best of this season’s vegetables. Jerusalem artichokes make a nice change from potatoes.

This dish is perfect for a mid-week dinner or casual entertaining. The cream sauce and fluffy puff pastry make it one of the most satisfying and comforting meat-free recipes on a cold day.

Easy Cauliflower & Kale Korma [vegan] by The Flexitarian

Purple Sprouting Broccoli with Butter Bean Mash

Purple Sprouting Broccoli with Butter Bean Mash [vegan]

I just love the deep colour of tender purple sprouting broccoli against the creamy butter bean mash. A generous drizzle of tangy caper vinaigrette adds tons of bold flavours.

This is a must-make late winter / early spring delicious recipe, ideal if like me you have a glut of purple sprouting broccoli lurking in your weekly veg box.

Creamy Leeks on Toast

Creamy Leeks on Toast [vegan]

Simple does it every time! I love these vegan creamy leeks on toast. This is the ultimate comfort food for a grey and rainy day. This dish has quickly become a big family favourite.

This recipe is really simple and straightforward. It serves 4 generously.

Curried Root Vegetable Casserole

Curried Root Vegetable Casserole [vegan] [gluten-free]

For a thrifty and hearty meal, look no further than this vegan Curried Root Vegetable Casserole. Carrots, parsnips and potatoes are smothered in a rich and creamy tomato coconut sauce.

This is a comforting one-pot meal that the whole family will enjoy. Red lentils and chickpeas boost the protein content of this recipe. Serve it with wholegrain rice and/or wholemeal pitta bread. Sprinkles of fresh coriander and spring onions will add extra flavour.

Beetroot Hummus Sandwich

Beetroot Hummus Sandwich [vegan]

This beetroot hummus is super delicious with plant-based proteins, fibre, fats and fresh vegetables. All this in only 10 minutes of prep. For a tasty twist, I added walnuts and mint to the hummus. Forget store-bought sandwiches, just take this one to work and enjoy!

Cabbage Curry

Cabbage Curry [vegan] [gluten-free]

This light and tasty cabbage curry is the perfect meat-free recipe to jazz up some white or green cabbage. Quick and easy to make, this dish is served with rice, fresh coriander and some optional red chillies if you want a little bit more heat.

Moroccan Cauliflower & Quinoa Salad [vegan] [gluten free]
