New Potato, Rocket and Radish Egg Salad [vegetarian] by The Flexitarian

Potato salad can be a little bland so I decided to jazz it up by adding rocket, radish, shallot and a mustardy vinaigrette.

This New Potato, Watercress and Radish Egg Salad makes a complete meal ideal for lunch or dinner.

Ingredients
 
 

  • 500 g new potato
  • 4 organic eggs
  • 250 g radish
  • 2 handfuls of rocket
  • 1 banana shallot
  • 2 Tbsp finely chopped chives
  • 1 Tbsp Dijon mustard
  • 2-3 Tbsp vinegar
  • 5-6 Tbsp extra virgin olive oil
  • salt & pepper
(Switch on to prevent your screen from going dark)

Instructions
 

  • Heat some water in a large saucepan.
  • When boiling add the potatoes and eggs. Cook for 12-15mins until the potatoes are cooked.
  • Drain and let the potatoes and eggs cool down.
  • Make the vinaigrette by mixing together mustard, vinegar and oil. Add finely chopped shallots and chives. Season to taste.
  • When cool enough to handle cut the potatoes in 1-2cm slices [0.4-0.8 inches]. Peel and slice the eggs.
  • Put the rocket in salad bowl. Top with the potatoes, eggs and sliced radishes. Mix together with the vinaigrette.
  • Serve at room temperature.
