Filo Pastry Recipes

A Collection of my Best Filo Pastry Recipes

Filo pastry is known for its incredibly light, flaky layers that bake into crisp, golden perfection. It’s a versatile ingredient often associated with Greek, Turkish, and Middle Eastern cuisines. It is used in both sweet and savoury dishes, making it perfect for everything from elegant desserts to hearty family meals. In this collection of filo pastry recipes, you’ll find simple dishes that show just how easy it is to cook with this delicate pastry at home.
Whether you’re making classic pies, crispy parcels, or indulgent desserts, filo pastry delivers a satisfying crunch and beautiful texture that’s hard to beat.

What Is Filo Pastry?

Filo pastry (sometimes spelled phyllo) is a very thin unleavened dough used in many Mediterranean and Middle Eastern cuisines. Unlike puff pastry or shortcrust pastry, filo contains very little fat. Instead of being folded with butter, it’s made of paper-thin sheets that are layered together with butter or oil to create its signature flaky texture.
When baked, the layers separate and crisp up, producing a light, crunchy pastry that works beautifully in both savoury and sweet dishes.

What Can You Make With Filo Pastry?

One of the reasons filo pastry is so popular is its versatility. Many classic dishes rely on filo pastry to achieve their distinctive texture, but it also works brilliantly in quick everyday meals when you want something crisp and light. It can be used in many types of recipes, including:

  • Savoury pies and pastries
  • Crispy pastry parcels and rolls
  • Layered bakes and tarts
  • Sweet desserts with nuts, honey, or fruit

Where To Buy Filo Pastry

Filo pastry is widely available in most supermarkets. You’ll usually find it in the chilled section near fresh pastry or sometimes in the frozen foods aisle.
Major supermarkets such as Tesco, Sainsbury’s, waitrose, Lidl and Aldi regularly stock it, and many international food shops also sell filo pastry sheets. It’s typically sold pre-rolled in thin layers, ready to use straight from the pack.

How Long Does Filo Pastry Last?

Fresh filo pastry normally lasts around one week in the fridge after purchase if it remains unopened. Once opened, it’s best to use it within a few days, as the delicate sheets can dry out quickly.
Always keep filo pastry tightly wrapped in its original packaging or sealed in cling film to prevent it from drying.

Can You Freeze Filo Pastry?

Yes, filo pastry freezes very well. In fact, many packs are sold frozen in supermarkets.
If freezing at home, keep the pastry tightly wrapped to protect it from air and moisture. Frozen filo pastry can usually be stored for up to three months. When you’re ready to use it, allow it to thaw slowly in the refrigerator before opening the package to avoid cracking the sheets.
