If you are looking for a recipe to make from seasonal apples and foraged blackberries, look no further than this scrumptious Blackberry, Apple & Feta Salad.

Juicy and colourful, blackberries bring the perfect Autumn flair to this salad. This dish is a  delicious blend of textures from creamy feta to crunchy salad leaves along with almonds tossed in a zingy lemon vinaigrette.

Bursting with flavours, you can serve it on its own as a light lunch for two or as a side dish for four.

Ingredients
  

  • 2 handfuls of salad leaves
  • 2 handfuls of blackberries
  • 1 small apple
  • 2 handfuls of almonds
  • 100 g feta cheese
  • few mint leaves

LEMON VINAIGRETTE:

  • 1 tsp Dijon mustard
  • 2 Tbsp lemon juice
  • 4 Tbsp extra virgin olive oil
  • 1 garlic clove crushed
  • 1 tsp pomegranate molasse or maple syrup to taste
  • Black pepper
(Switch on to prevent your screen from going dark)

Instructions
 

  • Make the vinaigrette by mixing together: Dijon mustard, olive oil, lemon juice, crushed garlic and pomegranate molasse.
  • Core the apple and cut it into thin slices.
  • In a salad bowl place salad leaves, apple slices, blackberries, crumbled feta, mint leaves and almonds.
  • Toss everything well in the vinaigrette.
  • Season to taste with pepper.
