Perusing Green Kitchen At Home, it is hard to imagine that David Frenkiel and Luise Vindahl were ever anything else than the perfect match. As it happens, this love story seemed implausible at first. When they first met, David was an “unhealthy” vegetarian while Luise was a meat eater. But as chance would have it, the combination of Luise’s talent for cooking and nutritional knowledge with David’s amazing photography resulted in the very successful Green Kitchen Stories blog.
Full disclosure here, I am a fan. I love their effortless, stylish yet healthy approach to food. I have followed their journey in awe, since their very first cookbook. The latest instalment in this adventure is their fourth book, Green Kitchen At Home, reflecting the evolution of their everyday life from a globetrotting couple to a family of five.
Any busy parent will know how challenging it is to cook homemade food. It not only takes time, but it is also hard to please everyone. Children have a way to make food come in or out of fashion. I am always dumbfounded when my daughter announces new favourites and retires old ones. This is, of course, often influenced by who she sat next to at school dinner time. I cook most of our meals from scratch, in the hope to instil healthy eating habits and a passion for good food. Most of our meals at home are now vegetarian with optional meat or fish for the kids. I refuse to cook several dishes though, so I am always on the lookout for recipes that make good veggie family meals that we can all enjoy.
Green Kitchen At Home is a collection of David and Luise’s vegetarian and vegan recipes that they make most often in their Stockholm kitchen. They are simple, quick, vegetarian and child-friendly dishes inspired by a love of healthy food and world cuisines. If you wish to adapt them, you will often find vegan options and /or nut free alternatives.
The cookbook is organised in 7 sections:
- Fridge Favourites – a selection of staple shortcuts for healthy meals.
- Breakfast – sweet and savoury breakfasts from Banana & Spinach Pancakes to Baked Carrot Cake Oatmeal.
- Handy Meals – great recipe ideas for lunchbox, picnic or easy lunch options such as Middle Eastern Sweet Potato Wraps or Roasted Root Frittata Muffins.
- During The Week – everyday simple dishes such as Roasted Root and Rye Waffle Toastie, Daily Dhal, Penne al Pomodoro with Vegan “Tuna” or Quinoa and Tofu Stir-Fry.
- At The Weekend – food to share with family and friends such as Vegetarian Bouillabaisse, Cauli “Fish” and Chips or Chermoula Baked Aubergine with Spiced Chickpeas.
- Spreads and Sides – yummy add-ons such as Easy Nut Butter, Flaxseed Crackers, Apricot and Tomato Chutney or Beetroot Spread.
- Desserts – healthy treats such as Nutty Quinoa & Chocolate Bars, Shattered Blueberry and Yoghurt Cake as well as Pumpkin Pie Chocolate Bars.
Green Kitchen At Home has obviously been influenced by David and Luise’s family life, yet the recipes are versatile enough that are not just limited to families. This is an eclectic mix of deliciousness, where busy working people will find a host of healthy inspiration too.
