These asparagus puff pastry bundles are a simple yet elegant way to celebrate the flavours of spring. With crisp, golden pastry, tender asparagus, and a tangy feta filling, they’re perfect for a light lunch, brunch, or appetiser. Easy to make and irresistibly moreish, they’ll add a touch of seasonal charm to your table.

Asparagus Puff Pastry Bundles: A Simple Yet Show-Stopping Spring Dish

Wrapped in golden, flaky puff pastry and filled with tender asparagus and tangy feta, these asparagus puff pastry bundles are perfect for a spring lunch, light dinner, or appetiser.

This is a simple yet impressive dish that will bring a touch of “je ne sais quoi” to any table.

The salty richness of the feta pairs beautifully with the fresh bite of asparagus, and the pastry adds that irresistible crunch. Serve them on their own as a starter, or add a salad and soft-boiled egg for a light yet satisfying meal. My radish salad makes also a delicious add-on.

TOP TIP: If you have asparagus of different thickness, simply half the thicker ones lengthwise so they cook in the same amount of time as the thinner ones.

🌱 MAKE IT VEGAN : I use Jus-Roll puff pastry which is 100% plant-based. You can swap the feta, yoghurt, and parmesan for vegan alternatives. I have also included a vegan egg alternative option in Note 1 of the recipe card.

How To Make These Asparagus Puff Pastry Bundles

Ingredients

To make these asparagus puff pastry bundles you will need:

  • asparagus
  • feta cheese
  • Greek yoghurt
  • garlic clove
  • lemon juice
  • olive oil
  • thyme
  • puff pastry sheet 
  • parmesan-style cheese 
  • 1 egg or alternative (see note 1)

Step 1: Prepare The Feta Filling

Crumble the feta into a bowl and mash roughly with the yoghurt, garlic, and lemon juice. Set aside.

Step 2: Prepare The Asparagus

Snap off the asparagus woody ends and discard them. If you have any thick asparagus stalks, cut them in half lengthwise.
Toss the asparagus stalks in olive oil and thyme

Step 3: Build The Asparagus Puff Pastry Bundles

Building Asparagus Puff Pastry Bundles

Roll out the puff pastry sheet to approximately 35 x 23 cm (14 x 9 inches) and cut it into 6 equal squares. Spread each square slightly apart so the bundles are easy to fold.

Share the feta mixture evenly between the squares by placing a heaped tablespoon of the mixture in the middle of each square.

Share the asparagus stalks equally between each square by placing them on top of the feta (you should have between 5 or 6 stalks in each bundle).

Sprinkle some parmesan on top.

Step 4: Close The Asparagus Puff Pastry Bundles

Beat the egg with one tablespoon of water. Brush the pastry of each square with the egg wash.

Fold two of the corners on either side of the filling and wrap the bundles tightly. Press gently so that the pastry corners stick together.

Brush each bundle all over with some more beaten egg.

Step 5: Bake In The Oven and Serve

Cook for 20 to 25 minutes until the asparagus are cooked and the pastry is golden.
Serve hot or warm.

Make-Ahead and Storage Tips

Make-Ahead Tips

These asparagus puff pastry bundles are best made on the day as the feta mixture can make the puff pastry soggy if assembled too far ahead.

Leftover Storage

Any leftover bundles can be stored in the fridge in an airtight container for up to 3 days. Remember to cool the bundles completely before storing.

Reheating Tips

  • Oven: Place the bundles on a baking tray lined with parchment paper and reheat for 8–10 minutes at 180°C (350°F), or until heated through and re-crisped.
  • Air Fryer: Place the bundles in the basket on the air fryer and reheat at 160°C (320°F) for about 5–7 minutes.
  • Microwave: Microwaving will make the pastry go soft and chewy, but if this is not an issue then pop the bundles for 45 seconds or so on MEDIUM.

  • 200 g feta cheese
  • 125 ml Greek yoghurt

  • 500 g asparagus (about 5 or 6 per bundle)

  • 1 puff pastry sheet approx 320g / 11 ounces
  • 25 g parmesan-style cheese grated

Note 1: instead of the  egg wash you can use
  • Vegan egg wash: Mix together 1 Tbsp melted dairy-free butter, 1 tsp dairy-free milk, and1 tsp maple syrup.
