Celeriac Remoulade With Carrots [vegan] by The Flexitarian

The classic French celeriac remoulade salad gets a makeover with the addition of carrots.

This is a very tasty& healthy starter that requires no cooking. The raw celeriac and carrots have a lovely crunch.

If you are not concerned about making it vegan just use regular mayonnaise.

Serve it with crusty bread.

You can also make this celeriac remoulade with beetroots.

Ingredients
 
 

  • 250 g raw celeriac
  • 200 g raw carrots
  • 1 lemon juice
  • 4 Tbsp vegan mayonnaise
  • 1/2 tsp caster sugar
  • 1 Tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 2 Tbsp soya cream
  • 2 – 3 Tbsp parsley leaves – finely chopped – optional
  • salt & pepper
(Switch on to prevent your screen from going dark)

Instructions
 

  • Peel the carrots and celeriac. Grate them coarsely into a salad bowl.
  • Make the dressing In a separate bowl by mixing together the other ingredients (except for the parsley).
  • Add the dressing to vegetables and toss well.
  • Add the parsley if using and season to taste.
  • This salad will keep 1-2 days in the fridge.
