Packed with plant-based protein, this no-cook vegan chickpea tuna salad recipe is a delicious and satisfying twist on the classic tuna salad. Hearty, this dish is filled with so many wonderful flavours that you will not miss the fish!

Budget-friendly and using a combination of pantry staples and fresh ingredients, this recipe is perfect for meal prep.

Once mashed, chickpeas have a similar texture to flaked tinned tuna. You can mash the chickpeas to your preferred consistency, whether you like a chunkier texture or a smoother blend.

To mimic the fishy taste of tuna, I use nori and capers paired with zingy lemon juice and dill. The rest of the ingredients include finely diced cherry tomatoes, cucumber, celery, and red onion combined with parsley, corn, and garlic. Everything is tossed is my vegan mayonnaise.

This vegan chickpea tuna salad is super easy to make and really versatile. You can serve it on its own, or use it as a baked potato topping or as sandwich or wrap filling. If you prefer an oil-free lighter alternative, you can swap the mayonnaise for plain yoghurt.

Leftovers will keep refrigerated for 2 to 3 days in an airtight container.

How to make this vegan chickpea tuna salad recipe

Ingredients

  • chickpeas
  • cherry tomatoes
  • cucumber
  • celery
  • red onion
  • fresh dill
  • fresh parsley
  • corn
  • capers
  • nori sheet 
  • lemon
  • garlic
  • vegan mayonnaise
  • Salt and pepper

TO SERVE:

  • Salad leaves
  • Pitta bread

Step 1: Mash chickpeas

Mash the chickpeas with a fork or potato masher in a salad bowl. Set aside.

Step 2: Prepare the vegetables

Finely dice the tomatoes, cucumber, celery, and onion.

Step 3: Combine ingredients

Place the chopped vegetables, corn, and herbs in a bowl.

Step 4: Add seasonings

Add capers, nori sheet, lemon juice, garlic, and mayonnaise. Mix until well blended. Season to taste with salt and pepper.

Step 5: Serve

Serve with salad leaves and pitta bread.

  • 400 g can chickpeas rinsed and drained
  • 75 g cherry tomatoes
  • 75 g cucumber
  • 1 celery branch
  • ½ red onion
  • 3 Tbsp finely chopped dill
  • 2 Tbsp finely chopped parsley
  • 160 g can corn rinsed and drained
  • 4 Tbsp capers
  • 1 nori sheet cut into tiny chunks
  • Juice of 1 large lemon
  • 1 garlic clove grated
  • 5 to 6 Tbsp vegan mayonnaise
  • Salt and pepper to taste

TO SERVE:

  • Salad leaves
  • Pitta bread

  • Mash the chickpeas with a fork or potato masher in a salad bowl. Set aside.

  • Place the chopped vegetables, corn, and herbs in a bowl.
    3 Tbsp finely chopped dill, 2 Tbsp finely chopped parsley, 160 g can corn
  • Add capers, nori sheet, lemon juice, garlic, and mayonnaise.
    4 Tbsp capers, 1 nori sheet, Juice of 1 large lemon, 1 garlic clove, 5 to 6 Tbsp vegan mayonnaise
  • Mix until well blended. Season to taste with salt and pepper.
