I am a lucky girl. Following the delicious Anna Jones‘ recipe box last year, Riverford sent me their latest guest chef selection to review.
The current recipe box has been created by The Happy Pear twins, David and Stephen Flynn. I have to admit, I did not know who they were but what a discovery! Based in Ireland, The Happy Pear includes a natural food store, wholefood cafes and evening restaurant, superfood sprout farm and online shop. The food is vibrant, full of flavours and straightforward.
The veggie duo created a scrumptious limited edition vegetarian recipe box for Riverford. Mine arrived last Friday, bursting to the brim with organic goodies.
The box is designed to include 3 meals for 2 people but, as quantities are quite generous, we managed to stretch it to 5 meals.
Throughout the past week we have been feasting on a super tasty Spanish Chickpea & Potato Bake, a warming Puy Lentil Coconut Dahl and a comforting Mexican Leek & Black Bean Chilli. What a treat!
All in all, I have become quite a fan of recipe boxes. They are ideal when you are busy or short on time but still want to make some nutritious home-cooked meals.
All the ingredients are there, neatly packaged and organised. Nothing goes to waste and the tried and tested recipes guarantee a great meal every time. Each dish comes with an easy to follow recipe card to cater to all skill levels and experience.
What makes Riverford’s recipe boxes even more special, is that they include mainly organic ingredients with most vegetables being grown in the UK.
