Tender and delicious, purple sprouting broccoli is a true early Spring gem. Its dazzling deep green and purple tones look stunning. Originally from the Mediterranean region, it has been grown in the UK for some time now and in season from February to April.
Purple sprouting broccoli makes a perfect side dish as well as a tasty addition to pasta, risotto, stir-fry and salad dishes. I particularly like it in Asian dishes. It is very easy to cook and can be steamed, boiled, stir-fried or roasted. If the stalks are a little too thick you can half them lengthwise. Make sure you do not overcook it so it still has a bite.
When buying it, make sure you pick firm stalks as these will be the freshest. The leaves are edible so there is no need to remove them.
A true nutritional powerhouse, this cousin of broccoli is boosting high levels of antioxidants, vitamin C, iron and folic acid.
