Silky and smooth, this Watercress, Spinach & Leek Soup is filled with goodness.
I find watercress and spinach very invigorating and this recipe is perfect whenever I need a little spring pick-me-up.
Mineral-rich watercress is said to boost immunity and help prevent cancer. It is also high in calcium, Vitamin C as well as folate. This is really a super ingredient we should all try to include more in our diet. It is versatile and can be added to soups, smoothies, salads etc… You can check my other watercress recipes here.
Just before serving, you can add some (dairy-free) cream on top of this soup as well as some chilli flakes. It is also really delicious with some crusty bread.

Watercress, Spinach & Leek Soup [vegan] [gluten free]

Ingredients
- 100 g watercress
- 65 g spinach
- 200 g leek
- 450 g potatoes
- 2 garlic cloves – crushed
- 1 litre vegetable stock
- 2 Tbsp olive oil
- dash of nutmeg
- optional: cream or dairy-free cream to serve
Instructions
- Heat the olive oil in a large saucepan. Add finely chopped leek and crushed garlic. Cook for 3 mins.
- Add watercress, spinach, peeled and diced potatoes.
- Add vegetable stock.
- Bring to the boil then cook covered under medium heat for 20 mins.
- Liquidise the soup. Season to taste with nutmeg.
- Serve with a dollop of cream or dairy-free cream if desired.
