I love using fruits in savoury recipes. Here strawberries add just the right amount of sweetness and juiciness to this Summery salad.
I love grilled halloumi but you can replace it with goat cheese or omit it entirely to make this dish vegan.
You can make the salad (without the halloumi) up to 4 hours ahead and keep it in the fridge. Just grill the cheese at the last minute.
I usually serve this Strawberry & Kale Halloumi Salad with the dressing on the side.
