Crispy tofu coated in a sticky sweet chilli sauce, and served on a bed of light and fluffy low-carb cauliflower rice. What’s not to like?! This is a quick and easy recipe, that is ideal if you are trying to include more plant-based food to your flexitarian diet. This sweet chilli tofu dish is served topped with spring onions, sesame seeds, and coriander.
The tofu is fried with some red pepper until golden and crispy, then doused in sweet chilli sauce, striking a perfect balance between sweet and spicy. For convenience, I use store-bought sweet chilli sauce but you can make your own. Meanwhile, the cauliflower rice is sauteed in oil with garlic.
Cauliflower rice is a really tasty low-carbohydrate alternative to traditional rice. Light and fluffy, it is really simple to prepare and a great way to add more vegetables to your meal. By swapping regular rice for cauliflower rice, you will cut down on carbohydrates while boosting the nutrient content of your dish.
TOP TIP: If you can plan ahead, press the tofu up to a day before (keeping it refrigerated until you are ready to use it).

How to Make this Sweet Chilli Tofu Recipe
Ingredients
To make this sweet chilli tofu with cauliflower rice recipe you will need:
FOR THE SWEET CHILLI TOFU
- extra-firm tofu
- dark soy sauce
- cornflour
- toasted sesame oil
- red pepper
- sweet chilli sauce
- spring onions
- white sesame seeds
- black sesame seeds
- coriander
FOR THE CAULIFLOWER RICE:
- cauliflower
- vegetable oil
- garlic clove
Step 1: Press the tofu
Press the tofu for around 20 minutes to extract as much water as possible. You can use a tofu press or wrap the tofu in a clean towel and press it between 2 plates by securely placing something heavy on top.
Step 2: Prepare the red pepper and cauliflower rice
While the tofu is pressing, you can prepare the red pepper and cauliflower rice.
Deseed the red pepper and cut into 2.5cm [1 inch] squares. Set aside.
Discard the green leaves of the cauliflower. With the coarse side of a cheese grater, grate the whole cauliflower head (florets and stalks). Set aside.
Step 3: Fry the tofu
Once you have pressed the tofu, discard the extra liquid and cut the tofu block in 1.5cm [¼ inch] dice. Place the tofu dice in a bowl and toss gently in the soy sauce. Then toss the tofu gently in the cornflour until the tofu dice are covered all-over.
Heat 2 tablespoons of sesame oil in a large frying pan. Add the tofu dice and pepper and cook under medium to high heat until the tofu is fried and golden all-over. Add the sweet chilli sauce to tofu and stir gently until coated all over.
Step 4: Fry the cauliflower rice
Heat 2 tablespoons of vegetable oil into a frying pan. Add the cauliflower rice and finely grated garlic clove. Fry gently for 5-8 mins.
Step 5: Serve
Serve the sweet chilli tofu with the cauliflower rice, topped with spring onions, sesame seeds, and coriander.
